Easter Desserts

When the kids were growing up I had a list of family specialties but we are a much smaller group now so possibly fine pastry from a local bakery, but also in the running is Whole Foods Tiramisu cake that is a great deal for around $25 or Wegmans cupcakes (best cupcakes out there) or their Key Lime Pie.

DD says she’s going to bring a Bunny Butt cake. Coconut covered white icing but the bunny’s rear end instead of face.

One of those Hostess snowball cakes is the tail.

Growing up I can't recall that Easter dessert was ever a certain/specific item. The entree was usually ham which seemed somewhat traditional.

We also would dye Easter eggs ahead of time, but never ate them since they sat around at room temperature for a few days.
We dye them, refrigerate, hide and hunt, make deviled eggs. I have 30 already boiled for the kids (12 of them ages 19 - 29).

I’m making some flourless chocolate cakes, ordered gf carrot cake and canolli’s, plus gf egg free vanilla cakes.

We're not big on Easter desserts but you have all inspired me to make a carrot cake cheesecake. If I am up for it, I might even decorate the top. We'll see.

Every get together in my family is my mother's Jewish Apple Cake. She has given the recipe to people and they always say it comes out nothing like hers. I think it's the cake pan. It was one of my grandfather's pans from his bakery. She took it before the bakery was liquidated after my step-grandfather died. I told her I want that pan eventually.

I always make a pineapple upside down cake but the secret is pineapple cake mix and the juice from the canned pineapples. It gives it a richer taste. I need to find out how many people she expects to be there Sunday since my dad is in the hospital she may have scaled back dinner. If it's the normal crew I'll also make a strawberry cake with fresh strawberries to decorate or the carrot cake I make. That gets requested at functions too. The secret to my carrot cakes is baby food carrots but it is always very popular.

I'm also stopping to get a babka at the bakery today.

When I was a child the dessert was always the pound cake lamb my grandfather made. My uncles took over the tradition until my aunt passed away. I wish I know what happened to that mold. The store bought ones are just not the same.

flourless chocolate cakes

One of my most favorite desserts ever!

As a kid we often had fried pound cake w/ ice cream and/or apple pie. Recently we've enjoyed a simple fruit dip (block of soft cream cheese, 2 TBSP brown sugar, tsp of vanilla mixed up and spread in a dish, top with warm caramel and nuts or chopped toffee or whatever you'd like) with sliced apples.

Surprised nobody to this point has mentioned Hot Cross Buns. THAT is the traditional Easter dessert to me. Easter is the only time bakeries make them.

I think most folks see them as an Easter brunch item, and not an Easter dessert item.

Our family starts our day with hot cross buns for breakfast/brunch on Easter so despite the sugar, don't consider them a dessert!

We don't have one specific dessert we always do. We'll be having carrot cake for our spring celebration this year! Some years it's been a lemon tart, or strawberry rhubarb crisp. I think there's been a banana pudding in there at times too. Oh and a coconut cake has made appearances also.

Now for the other parts of the meal, I mostly have no idea yet!! Everyone has different food requirements at my table, (including me), it's always hard to plan. There will definitely be deviled eggs, rolls, salad. Beyond that ... ?

Lentil stew is an easy starter to an Easter meal if you need an easy go to recipe.

I love lentils, but I always think of them as more of a fall / winter food, at least made into a stew. Not for a spring celebration. Now maybe a lentil salad with lots of fresh herbs might be a nice side, but I have a hard time getting the lentils cooked just right for a salad, so they're fully done but not mushy. I was sort of thinking ravioli with an artichoke ricotta filling, but then I'm not making homemade ravioli, and that filling doesn't seem to exist where I shop! I've got a bag of carrots, fresh peas, and asparagus, so at least there will be some veggies! Probably will end up with a pasta of some sort, herb crusted salmon, and some type of beef.
