... we did a road trip and hotel stay when our twins were that age. We stayed at an Embassy Suites, so some similarities to 1BR.
2 pack&plays worked great. They napped in the BR part because it was quieter and slept in the LR part at night. We just didn't open the pull-out, and we had enough room.
Our twins used the Fisher Price portable high chairs/booster chairs, and we were able to strap them onto the dining chairs. You might be able to rent something like this if you think it would work better than 2 high chairs.
We were at my work conference, so sometimes we were both available, and sometimes it was just DH and the kids. We used 2 umbrella strollers with connectors. Then either 1 parent could push each stroller if unconnected or 1 parent could push the connected set-up. That arrangement might be OK for the airport, but might not work as well in the parks. Maybe bringing or renting a double jogger instead?
