We're planning a November trip to do the 7 day cruise.
We'll have two young boys (4 and 3yrs) so we'll be taking two days to drive down.

We've decided to stay in Knoxville, TN for the night, any suggestions on where to stay???
The second night we'll be staying right by the port.
 
That sounds about right. Crossing in Detroit means you will be taking I75...There's a great book called "Along I75" Gives great info on rest stops, hotels, etc plus it is a very good map. We found it invaluable on our trip. The website will also give you the most up to date info on construction and detours after you've bought the book. There was already great info on the best places to stop with kids as well. We usually drive straight thru. Driving time to MCO is almost exactly 24hrs for us based on our speed and stops. So if you drove 10 hrs each day the third day you would only have about 4 hours remaining, plus the time to get to ship. I can't remember exactly but I think the second day you would actually make it into FL for the night, arriving third day around mid day.
I would also suggest packing as much food as possible for the drive. We found it very difficult to get a good meal on the road.
 
We leave London to drive down each time around 6:30 or 7 PM that way the kids have eaten you put them in their pj's and they sleep for the longest part of the journey. We usually make it to the Georgia Welcome centre and stop there and have breakfast. We bring a plug in cooler for milk etc so we don't have to buy the stuff there. We then drive through Geargia and stop I think around Macon there is a nice rest area there we have lunch then go to Valdosta get in there about 3 in the afternoon. We stop there for the night then leave about 9 the next morning after a nice breakfast in the hotel which is included we stay at the Fairfield Inn it is nice and they have internet coupons for rooms for 43 dollars a night. We then get to WDW in about 3 to 4 hours we also always have to make our customary stop at the Florida welcome centre for the free Orange Juice and window stickers and Disney brochures. Hope this helps. Oh ya and we would never make the trip without the Along the I75 book.
