Does anyone know what type of batter was used for fish & chip at Yorkshire?

I just came back and had 2 ADRs a day for 8 days but BEST food I had was fish and chip from Yorkshire County Fish Shop at Epcot.

I'm not really fish & chip person but was curious since alot of people here seem to like it so I tried it and I was so glad I did.

Their fish and fries was the best I had anywhere.

Does anyone know what type of batter was used for their fish? It wasn't bread batter but more of tempura batter?

I'm so craving for it now....

I agree that the food at Yorkshire is very good. Not sure about the batter, but I think part of the equation is that you're getting it fresh out of the fryer instead of something that's been under a heat lamp.

Yes, totally agree. If only I can find place in Southern California like Yorkshire Fish and Chip.....
 
1) ACTUAL Epcot Yorkshire & Rose and Crown Fish and Chips Batter:

  • 3/4 cup cornstarch
  • 2 2/3 cups flour
  • 1 teaspoon salt
  • 3 teaspoons sugar
  • 1/8 teaspoon white pepper
  • 1 3/4 cups water
  • 2 egg yolks
  • 1/3 cup flat beer
  • 2 teaspoons baking powder

2) Instructions
  1. Cut fish into fingers about 2 ounces each and place in a glass or stainless steel pan.
  2. Mix lemon juice with Worcestershire sauce, salt, pepper, and vegetable seasoning.
  3. Pour over fish and marinate in refrigerator for 1 hour, turning every so often, coating the fish.
  4. Prepare batter.
  5. Remove fish from marinade, drain, dip in batter and fry in hot oil for about 5 minutes, turning to brown both sides, if necessary.
  6. Remove from oil and drain on paper towels.
  7. Serve with chips and malt vinegar.
  8. Batter

  10. In a separate bowl, beat water, egg yolks, and beer together with a whisk and slowly add dry ingredients.
  11. Continue to mix with whisk until mixture is smooth.

1) Alas, these are some of those "To Taste" type of ingredients.
2) Normally, just a dash of each, and add more, later, if you wish.
 
@TheRustyScupper do you know if they've recently changed the batters to be the exact same recipe? I can't have spices and last year the chef in the Rose and Crown had my fish prepared at Yorkshire since that batter wasn't seasoned with all those "extras". I know i need to ask at every restaurant about dietary concerns but I'd rather know ahead of time so I don't head into EPCOT with that being my planned meal. TIA
