Do you enjoy paella?

Had it a few times. I remember once for my birthday, my wife wanted to go out some place a little more special than just pizza and we went to a tapas restaurant that I liked. I thought we were going to go for just small plates to share, but that night they had paella, which was the most expensive item on their menu and big enough for a meal for two. So it was just that and maybe two small plates.

That restaurant is gone though, and controversial because the owner (the restaurant next door) of the property forced their tenant out in order to build their own restaurant.

I've only had the version at Food & Wine... it was tasty, though. I wouldn't mind trying it somewhere else/again.

I have been offered it, but I refuse to try it unless I am in España. And while I've been all over the world, Spain has continued to elude me.

I've been to Spain multiple times, but haven't yet made it anywhere near Valencia, where it originated. It's not ubiquitous in Andalucia or Madrid, in my experience.

Yes it’s super yummy! It needs to be made with saffron though or it’s just not as good. We have been to parties where they cater a giant paella, its in a 4-5 foot giant pan where the chef makes it fresh.

The traditional version doesn't have any fish.
Depends on where you are. South of France I had it for the first time with as a celebration for Bastille Day. Cooked at the end of a pier in a small fishing village in a huge pan. That version had no fish. Rabbit, Chicken were the main meats. But when in Barcelona most versions have seafood.

I am a fan of Jose Andres version at Jaleo.

I don't disagree with you but that doesn't mean that it hasn't changed over the years. Originally I believe it also did not contain peas but that has now changed as well for most versions.

I've never had Paella but all I can think about when I see this thread
is the Seinfeld episode:

[Costanza House]

FRANK: They're not coming?

GEORGE: No, they had plans.

ESTELLE: How could they have plans?

GEORGE: That's what I wanna know.

FRANK: Well what difference does it make? They wouldn't lie to us, they're are dear friends.

ESTELLE: What am I supposed to do with all this Paella?

GEORGE: They said tomorrow, maybe.

FRANK: Maybe?

ESTELLE: Maybe they don't like us.

FRANK: Why wouldn't they like us? (tastes the Paella; disgusted) Again with the pepper? What do you gotta use all the pepper for?

ESTELLE: Ah keep quiet.

FRANK: What are you trying to set my mouth on fire?

GEORGE: I don't know what the reason could be.
