Do a HS+Epcot park hopper or sleep in and just do Epcot?

Next week I am doing a weekend trip to WDW (No PTO at new job right now so its the only way I can go). Taking a late flight to MCO but always possibility of delays so may not get in till midnight. I am only going really for the food and wine fest at epcot. I was considering doing a park hopper to do HS in the morning then hop to Epcot when permissible and get some food and ride a few rides.

Or, I could sleep in and go to Epcot a bit after opening and spend the day there. Which would you do?

I'd just do Epcot. Save the money from the PH and spend it on food/beverages. I should say that DHS doesn't hold a lot of appeal for me as I am not a coaster/big drop/screen-ride fan. I mostly do B&tB, MMRR, Indy, TSM at DHS. I'd sleep in, have a relaxing breakfast (or eat at the France pavilion), and have a leisurely day at Epcot, staying for the fireworks at the end of the day... ESPECIALLY if I got in at midnight! (although... can you add PH day-of? If so, you might wait and see what time you arrive, how you are feeling, etc before adding hopping to your ticket).

If there are not any ‘must do’s’ at DHS I’d skip it and just do Epcot.

Agree with @scrappinginontario - not so sure the PH at DHS is really worth it for such a short visit. Unless you have a ride that you really really want/need to do, I'd skip it especially if you may arrive late the night before. IMO DHS is usually a hot mess early in the day until 3/4p anyway, it's not really an enjoyable morning park imo since it's not that big so all the crowds really have no where to go unlike the larger parks.
