Possibly 2 option. One is get dropped off with luggage (maybe you will see a place for handicap drop-off. The traffic is often not so heavy or crazy at Port Canaveral as in Miami.
If you are parking at the port, Deck 3 of the garage is where the elevator is (you will need this for returning to your car at the end of cruise). There is a walkway over the street, where an elevator will take you down to check-in. I think you will have less than a city block to walk, max.

Once you have parked and walked across, take the elevator down to Ground floor for check-in. Then you put carry-ons through x-ray. Find another elevator or ride the escalator to the waiting area. Then roll onto the ship on a ramped, enclosed gangway.

Porters will assist you with your baggage, and parking personnel will direct drivers to the appropriate parking facility. All parking facilities are convenient, secure and patrolled 24 hours a day. Passenger and luggage drop off is available in front of the Terminal or in the parking facility.”
They should be able to direct you to a drop-off spot with the least walking required.
