Does anyone know if maxpass at DL would ever sell out?

I have no memory if it ever selling out or hearing people couldn't purchase it. That said I do remember not having many fastpasses to select after 4 or 5pm. We used it on our last 3 trips to Disneyland and passes for ride were slim after dinner. But you could also re-ride them using FP.

It did not. Anyone with a ticket could buy it. Keep in mind that while MaxPass was more convenient, all park guests still had access to the FastPass Kiosks. The pool of availability was essentially the same, excetp that with MaxPass you could pick up someone else's cancellations. MP was really just an easier way to manage things, but wasn't super necessary. It did work rather well though!

We used it last time we went in Feb 2019 and really liked it but if we were local to DL wojld probably never have bought it .

I'm surprised they removed The Grey Stuff cupcake from Gaston's Tavern, supply issues or an attempt to increase bookings at Be Our Guest? I can't imagine it wasn't popular.

Noooooo. I'm so sad about this! The grey stuff cupcake is one of our favorite MK treats.

I was surprised that when I looked at the menu for Be Our Guest the Grey stuff didn't appear to be on the menu. It is only in the small print. It is easy to miss, so they don't want to focus on it.
It has been quite a while since I ate there, but in my memory the dish was called "The Grey Stuff".

I'm more upset by the Tortuga turkey leg. I'm not a fan of MK QS food. I liked the tuna at CHH and the turkey leg. Eh, it's a good excuse to head to Geyser Point.
Haven't told DD about the loss of the buffalo chicken loaded tater tots. She had already decided she was definitely getting those again.

After it launches you will be able to add it to an existing package. If you do this you are going to be paying for genie+ for the entire length of your ticket

I have been trying to call Disney vacation telephone number for the past 2 days and the wait has been over 2 hours whenever I try. Anyone have any idea why? Galactic Starcruiser is a different number but maybe they just go to the same call center?

This is an ongoing issue. If you get the option to select a call back, do that. I ended up doing so and was finally helped a little while later. The call center is a mess. The phone tree makes no sense right now and I found it very difficult to actually get to the department that I needed to get to. The numbers on the website aren't even always numbers that will take you directly to the department that they are listed for. It needs an overhaul.

I'm only sorry I didn't have a more helpful answer! Definitely, take the call back option though, if you are offered it. I didn't get it every time I called in, but I was offered it on a couple occasions when the wait was over two hours. I think I received the returned call about an hour and a half later.
