Is it true that if we purchase a 4 day pass but decide once we are there we want a 6 day pass, we only have to pay the difference between a 4 and 6 day? Its not going to cost us the price of a 2 day pass?

Yes, that is correct. And the more days you add, the cheaper it gets per day... In other words, going from a one day pass to a two day costs a decent amount...but then going from an 8 day pass to a 9 day pass costs very little.

Yes but if you do that you won't be able to add FP+ for those 2 extra days in advance. I think the best thing is to do the 6 days upfront
