Disney for a day, without a theme park ticket

So my wife and I are going to be on property for one night in september, we'll be arriving about mid day saturday and leaving sunday morning. We are not buying theme park tickets.

I know we'll be hitting up Disney Springs, probably ride the monorail and some of the boats.

Does anyone have any other interesting ideas of things to do?
 
Maybe Animal Kingdom Lodge, see some animals in the savannahs?
If you go to Disney Springs go after 7pm, that's when all the live entertainment will be out
 
If you arrive before 3, go over to Fort Wilderness and check out Tri Circle D Ranch. It is a favorite for my family. You can go on a trail ride or wagon or carriage ride, pet Cinderella's ponies and other horses, see a calliope from 1907 that Walt bought for the parades at Disneyland (And still works today, I might add). Last time, we even saw them shoeing Chief, the black Percheron that will be ridden by the Headless Horseman at the Halloween party this year.
 
The Board Walk in the evening is something we enjoy. Drinks in the Belle Vue Lounge, inside and on the porch, jugglers and magicians on the 'boards and one can see the aerials of Illuminations from several points. Also the Big River Brewery andthe ESPN Club.

Splitsville Bowling Alley in Disney Springs is really fun and they have good food too!
 
We will have one non-park day coming up and I have too many choices.

Trader Sam's at the Poly along with watching Wishes and the Water parade after.

Fort Wilderness to visit the ranch and the horses.

Visit AKL lodge for dinner and to walk around and enjoy the animals.

Disney Springs.

Mini golf at Winter Summerland. It has been on the list forever but we never make it there.
 
We did this just a few weeks ago. We had a full day. Here's what we did (3 adults, 1 teen, 1 child)

Animation class at Art of Animation
Coke samplers at Disney Springs (in and out for this)
Lunch at Pop Century
Dessert (beignets) at POR- French quarter
Walked through POR- Riverside
Surrey Bikes at the boardwalk and a walk through the shops
Culinary tour at AKLfollowed by visiting the animals
Drinks at Trader Sam's
Monorail loop- dole whips for the kids, soap at basin
Rode the monorail to Epcot and back
Dinner at Ohana, timed to coincide with Wishes and the Electrical Parade
It was one of the best days we've spent at Disney!

Regardless of what you guys do, keep moving and have fun!

I'm hoping to do something similar like this in October. I definitely want to check out all of the Monorail resorts!
