I will be using the dining plan for the first time this year. We will be staying 10 nights. There will be two of us on the plan. My question is will they take off two credits or 1 credit at a time. We will be eating at the same time. Thanks in advanced.
 
One credit per person. Each person gets a set of credits each day.

One credit per ENTRÉE (except at Signature restaurants)--at most (so people have reported) non-buffet/non-family style TS places, if you share an entrée, then they charge 1 credit, not 2. They charge 2 credits if each person orders an entrée.

And you get a set of credits equal to the number of people × number of nights (people can use each other's credits, and it's not by the number of days).

So the OP will have a total of 20 TS credits, 20 CS credits, 20 snacks. They can be used in any combination. (If one person is a snacker and the other isn't, there's no rule that says they must have 10 snacks each--just that the room gets 20.)
 
Most of the table service restaurants in Disney parks & at resorts take 1 TS credit per person. Some of the restaurants do not take the dining plan at all (Rainforest Cafe outside AK & in DTD, and some of the DTD restaurants do not take dining plan.

Signature restaurants and the dinner shows are 2 TS credits per person so if both of you go to a 2 TS place they will take off 4 TS credits. This list from the DDP sticky at the top of the dining plan board includes these places:

• Artist Point (Wilderness Lodge)
• California Grill (Contemporary Resort)
• Cinderella’s Royal Table character breakfast/lunch/dinner with photo package (Magic Kingdom)
• Citricos (Grand Floridian)
• Flying Fish Café (Boardwalk Inn & Villas)
• Hollywood Brown Derby (MGM Studios)
• Jiko - The Cooking Place (Animal Kingdom Lodge)
• Narcoossee's (Grand Floridian)
• Yachtsman Steakhouse (Yacht Club)

Dinner Shows requiring 2 TS credits per person:
• Disney's Spirit of Aloha Dinner Show (Polynesian)
• Hoop-Dee-Doo Musical Revue (Fort Wilderness)
• Mickey's Backyard Barbeque (Fort Wilderness)
