We were surprised at this as well. We did manage to get the one and only t-shirt that referenced Iceland and Scotland. We had the late dinner seating and weren't planning on going to the show the first night. About 20 minutes before the shops were supposed to open, our son came into the stateroom and said there were already people lined up waiting to get in. We went down about 10 minutes later and they had opened the shops a few minutes early. It was a t-shirt frenzy!! It was nuts with people just grabbing things right and left. They had quite a few shirts that referenced the Norwegian Fjords, but just that one t-shirt for our sailing. I was also surprised that the shop down on Deck 3 was stocked to the gills with Norwegian and Russian items (hello - we weren't sailing to Russia on that itinerary) and nothing for Iceland. I'm sure it would have been a hassle for them to set it up for the one sailing, but it would have been nice to have had a few offerings from all the countries we were visiting instead of all the Russian stuff.
But at the end of the day, if this is all I have to complain about (and it really was - the rest of the cruise was amazing in every way!!), I'm one pretty lucky gal!
