Hi, I would recommend the following:
If lunch, I would recommend the Brown Derby (in Disney Studios). A Cobb Salad and a nice glass of White Wine (I'd go for the Chalk Hill Imagine) and then share a Grapefruit Cake for dessert.

If a dinner, my favorite is Citricos at the Grand Floridian. Start with a drink in Misner's Lounge with the music outside (a Stoli martini works for me). I also have a favorite server at Citricos (but that is a secret :)). As a runner-up for dinner, I would pick the California Grill (late enough so you can go out on the outside deck and watch "Wishes" from there).

For a quiet romantic date I took an ex GF to Victoria and Alberts. While pricey it was worth it! pirate:
 
Great suggestions. V&A is special but very expensive. HBD is one of my faves for either lunch or dinner. Citricos is a great date and I would also recommend this for a special occasion. If driving, I'd recommend using the valet parking as visitors' parking is across the street and valet adds to the white glove experience. Also, make note of when Wishes is scheduled at MK and you might be able to plan an after dinner stroll on the beach between GF and the Poly and enjoy the show from a distance.

I'd also add Bistro de Paris in France, especially if you like authentic French cuisine. If you get a late seating, ask for a window table (when you book the reservation, they can note your preference) and if they can make that accomodation you can enjoy IllumiNations from your table.
 

I sent my grandparents to Artist Point in WL for their anniversary in 2008. They were treated like royalty and really enjoyed the food.
 
My favorite for atmosphere (and food) is Jiko, followed by Citricos and Artist Point.
 
I could be alone here but I have two places I'd suggest.

1. The Wave- its beautiful with earth tones and perfect Low lighting. I haven't been since the first month it was open but there wasn't a lot of kids in there at all. The waiting lounge is awesome with circle couches and cool neon lighting.

2. Hoop Dee Do- less traditional than most "date" places that come to mind. Not only do you get dinner but you a pretty fun show that in my opinion is worth the price. If your curious if they seat you with others the answer is no
They have plenty of tables for two. A couple added bonuses is they offer free (included with the price) beer/wine/sangria all you can drink. The other bonus is the 930pm showing. This show features less people so they often don't have anyone on the side balcony and the crowd is mostly adults.
