Mine is very simple & I have no measurements :teeth:

Hamburger
Onion
Green pepper
Egg
Seasoning salt
Pepper
Parmesan cheese
Rice

I mix this all together & form into balls & cook in my crock pot. After they are cooked I drain any grease. I put tomato sauce over the meatballs & sprinkle with more parmesan cheese & cook till the sauce is hot & the cheese melted.

These are basically like meatloaf :thumbsup2

Ok does anyone have a recipe for porcupine meatballs, that they would care to share?

Thanks for the update!

I just got this in an email

Jennifer,

Well, I'm finally back! We got back from England on the 10th, but had to leave the morning of the 11th unexpectedly to go to my parents house. Alan had a job to do down there. So, now I'm back and trying to reclaim my life. Please let everyone on the list know that I'm ok, had a great time, and hope to be posting tonight or tomorrow.

Thanks,
Glynis

Thanks! :goodvibes Deb, that is too funny. If he decides he cares at some point, they do pull them out by their heads, so they really did come head first! :rotfl:

I may tell him that. I keep waiting for him to ask me if you ate a burrito since you had more than one baby. Of course he is convinced that eating a burrito makes you have 3 babies at once and you only had 2:rotfl2: He hasn't figured out fractions yet so he isn't question if you ate part of a burrito:lmao:

Since it keep raining here and the bordom had set in...I took a nap :rotfl2: It is amazing how quiet things are here when the niece and nephew aren't here. they are spending the day with my Dad.

Hunter is trying to convinence me that we should not wait until Friday to leave. He says he is too excited to wait. Of course his brothers don't think it would be fair if we get there before Saturay :rotfl:

Now I need to get ready for work. Hopefully we'll be really busy and my mind will be occupied.

mix ingredients and form into meatballs

cover with 1 can diced tomatoes or tomato sauce mixed with 1 cup water and a couple tablespoons of whorchester sauce.

bake at 350 for about 45 minutes covered and 15 min uncovered

is anyone watching Nashville star?
I am! The two girls are from our area here! There is one woman I really like - the one with 5 kids - I love her voice and hope she does "Pop goes the Country" well... Though it seems more 80's than anything...

Tammi here is the recipe:

Swedish Meatballs

2 pounds hamburger
2 pounds pork
Minced onions
2 eggs
Bread crumbs
Salt & pepper

She did not give me amounts, for the onions & bread crumbs. She just adds what she feels it needs. She rolls these into small balls & cooks them in a skillet. I use my crockpot :) These make a lot & are really good!
Thanks Janet. But what goes into the sauce? Is it only cream of mushroom soup?

Wow... you all have been quiet today!

Hope every one is doing well. See you in the morning!

Do you cook the rice first for the porcupine balls or not?

Bernadette - another adorable creation.

Jennifer - beautiful girls. :goodvibes:

Elizabeth - I was hoping there would be an update on your mom's condition. and :wizard: that you get home safely and your back is feeling better.

Can you believe that I have NOT missed getting up at 0'dark thirty and sitting in traffic for an hour to get to work? Oh well, 2 more days.

Nicholas had another bball game tonight. They won, 11-1. He played well and seems to enjoy it. I said to Bob that Nicholas is smiling more when he plays bball than he does when he plays soccer. Bob said it's because he's exhausted from running up and down the soccer field and that he is too tired to smile.

So 2 more days of work, a vet appt for the doggies tomorrow night, bball game on Wed, and then we are heading to my parents' on Thursday. Bob is going with us and we plan on a visit to Kennywood on Friday and maybe a Pittsburgh Pirates game Sat. night. We will come home on Monday.

Ok, enough prattle from me for one night. I need to get my behind to bed. :wizard: and  to you all!

I don't think the rice would be precooked, as it will cook while you are cooking the meatballs. Also when you add the tomatoes and heat through, more cooking.

Glad Nicholas is enjoying baseball! Sounds like a great long weekend!

You're right! I googled "porcupine meatball recipe" and they all say uncooked rice.
