I am with Chérie, carrots are one of those vegetables that can only be eaten uncooked. But looking at the ingredients, carrots appear to be just a minor ingredient, you could also call it a creamy cheese soup with carrots...But it sounds very similar to the butternut squash soup recipe I once tried from Boma. This was the reason that I had to find out what "American cheese" is - processed cheese.

OH YES! You could definitley sub in squash for the carrots! We make pumpkin soup here at home a lot in the fall. But it's more savory than this. OH, and I also JUST NOW, thought of something that would be VERY tasty in this. Next time I make this carrot one, I'm going to use some coconut cream. I put that in my pumpkin soup, having learned it in Thailand to make it that way.

One and half a month! And btw this quite exactly the time I have left over here in Berlin as well...
