Right now, I'm toying with the idea of getting 2-day PHs for our February trip.
Day 1: morning at DHS, evening at MK
Day 2: morning at AK, evening at Epcot
It would work best with our schedule to do the Thursday and the Saturday before the holiday (leaving Friday as a resort day). Which parks would you do which day? (I'm hoping for low crowds at least a couple of hours on our Epcot day. The last time we went to Epcot--our favorite park--was Black Friday 2019, and we didn't get to enjoy walking around WS at all!) Would we be better saving the resort day for Saturday and doing a park day on Friday? Not sure there will be a huge difference in crowds between that Friday and Saturday. Thanks!

Could you possibly do HS with EP on Thursday? Those parks are closest together to hop anyway. And that keeps you out of EP on a weekend when it’s most busy there. Then do AK and MK on Saturday.

I know Epcot is busy on the weekends during Food & Wine. Is it the same for the other festivals? Usually we do DHS and Epcot on the same day, but now that park hopping isn't allowed until after 2:00 it doesn't make much difference. We will take an afternoon break at our resort, so park proximity isn't as much of a deal. We usually go into DHS for a couple of hours and then hop to Epcot for lunch, take an afternoon break, and then go back to Epcot for the evening. That won't work now. The reason I chose the parks the way I did is because I'm thinking of buying the LL passes for Remy, RotR, and MMRR (the only rides we haven't gotten to experience). Since I can only have two in one day, I can't do DHS and Epcot on the same day. And the reason I chose AK for the second day is because that's when we are staying at AKV. Which park do you think will be busiest that Saturday night: MK or Epcot?
 
Doing the parks your original way makes sense with the ILLs you want to purchase. Maybe someone with experience going in February will be able to give you helpful info (I’ve never been in February).
Once Genie starts hopefully you’ll be able to get more info to help guide your decision.
This is an interesting point you’re making about those ILLs that I’d never thought of… and I’ll bet there will be many more people who will face making the same decision!
