Crockpot Recipes

I tried the brown sugar chicken, I thought it was good, but my family thought it was too sweet. Oh well, I shredded it and made chicken salad which had a better response. I signed up for her emails (the lady who used her crockpot for a year) and I got one today about cooking brownies in coffee mugs inside the crockpot. My kids really want to try it, I will let you know how it turns out. :thumbsup2
 
Pumpkin Pie Pudding......

15oz can of pumpkin
12oz can evaporated milk
3/4 C sugar
1/2 C buttermilk pancake mix
2 eggs, beaten
2 Tbsp melted butter
1 Tbsp pumpkin pie spice
2 tsp vanilla

mix all ingredients together and add to a greased crock pot. Cover and cook on low til temp reaches 160 degrees. Mine took about 4 hours. Serve in bowls topped with whip cream.
It is so yummy, like the pie but without the crust. Kind of a custard consistency.

I came across this recipe from the link on this thread and made it last night...it was a HOMERUN HIT!!!

Swiss Chicken Casserole (not very healthy but yummy!)
4-5 boneless skinless chicken breasts (frozen works best)
4 slices swiss cheese
cream of mushroom soup
1/2 can milk
stuffing mix
stick of melted butter

Spray CP with cooking spray. Place chicken in bottom of crock pot, layering as necessary. Place swiss cheese slices over top. Mix mushroom soup with milk, adding spices to taste (I use garlic powder, onion powder, salt, pepper). Pour over chicken. Empty bag of stuffing on top. Pour melted butter over entire thing. Cover and cook on high 4 hrs, low 6-8 hrs.


I did use skim milk and the low fat mushroom soup...smelled heavenly while cooking! :cloud9: I am fixing the steak fajitas recipe monday night, too! :thumbsup2 :thumbsup2

I love the Swiss Chicken recipe and so does my dh. I use cr of chicken soup instead of cr of mushroom since I don't like mushrooms..
 

I'm not certain how kid friendly this one is, but it is one of our favorites - the kids like it too. :thumbsup2

4 green peppers (I pick peppers that will sit up well in the crockpot)
about 1-1/2 lbs. ground beef, uncooked
rice (as little or as much as you'd like)
1 jar of spaghetti sauce

Hollow out the inside of the green peppers - I just cut off the top and clean out the stem/seeds.
Mix together the ground beef (uncooked) and rice.
Stuff the peppers with the meat mixture.
Place the peppers upright in the crockpot.
Pour entire jar of spaghetti sauce over the peppers.
Cook on high for 4-5 hours or low for about 8 hours.

Your house will smell awesome!

Dumb question, im sure, but do you cook the rice before mixing it with the ground beef?
 
I just wanted to know if you can put a London Broil in the crockpot?

My step-mom cooks hers this way and I'm not sure how it would come out. :confused3

I have always grilled mine. Thought maybe if the London Broil cooks great in the crockpot, I would try it for dinner tonight. :goodvibes

Nothing else to do today, just clean and wait in the house for "Hanna" :scared1: to pass by.
 
Chicken Stroganoff

4 chicken breasts (I usually use frozen)
1 can cr of chicken soup
1 sm carton sour cream
1 envelope onion soup

Place chicken on bottom of pot, mix other ingredients pour on top.pour a little water on top. Cover and cook on low about 6 hours.

Serve over egg noodles.

This is SO good! My picky kids even eat it!!!

WOW! This sounds really good and not very expensive at all! I will need to try this one..
 
here is another that is super easy and delish.

a little olive oil and Sautee half a bag each of frozen chopped onion and bell pepper. then add one pound of hamburger meat.

Add large can of tomato sauce and 2 cans of rotel
Add 2 cans each of corn and pinto beans.
Really any vegitables will do.

Add a packet of taco seasoning and one of ranch dressing. then add water to fill out crock pot. Simmer all day.

Serve with fritos and cheese and sour cream for garnishments

I make a taco soup in a big stew pot, not in the crockpot.. I put 2 big cans of diced tomatoes, 2 cans of hominy, 2 cans of corn, 2 cans of pinto beans, 2 cans of chili beans, 2 cans of red beans, 2 cans of kidney bean.. I know.. I know.. LOTS of beans.. 2 cans of rotel.. all of these things go in without draining them.. let it simmer.. put in 1 package of taco seasoning.. brown 1 pound of hamburger meat and put in with all the other ingredients.. simmer for an hour or 2.. put over fritos and then put shredded cheese over the top..

YUM YUM! Best stuff I ever make.. I make alot so we have plenty of leftovers and its always a hit!! Its really good to have on a cold day..
 
This recipes sound great.


No cooking the rice before mixing with the ground meat. It cooks while in the crock pot.
 
Here's dinner from a couple of nights ago:
( I don't remember where the idea came from originally)

Italian Turkey Tortellini

Ingredients:

1 pkg. Italian Turkey Sausage, or 1 lb. bulk Italian Turkey Sausage meat
1 onion, diced
2 peppers (I like a yellow and green for color), diced
1 pkg. mushrooms, sliced
1 jar spaghetti sauce
1 can Italian diced tomatoes
1 tsp. basil
salt and pepper to taste
3 cloves minced garlic (we REALLY like garlic!)
1 pkg. fresh/refrigerated whole wheat 3-cheese tortellini
fresh basil, chopped

Directions:

Brown sausage in a pan (I like to remove sausage from casings first. Add sausage, peppers, onions, mushrooms, spaghetti sauce, tomatoes, dried basil, salt, pepper and garlic to crock pot. Cook on low for 6-8 hours. Add tortellini to crockpot, and stir. Replace lid, and allow to cook for 20 minutes. Add 1/8 c. chopped fresh basil and stir. Makes approx. 6-8 servings.

I usually serve this with salad and fruit. (Okay, it was a long week... the kids were very happy that the "fruit" took the form of a lemon meringue pie from the bakery on the way home last night. :rotfl2: :rotfl2: )

No question is a dumb one. No, you do not cook the rice. That is one reason I really like this recipe - it is quick and easy to prepare.

Just regular white or brown rice? Or does it have to be the fast cooking kind?

Sorry, I've messed up recipes before by using the wrong kind!
 
it is getting to be crockpot weather and cant wait to try some of these out yummy.
 
Does anyone have issues with cooking certain types of recipes because of crockpot size? I've made a couple of things that burned badly when it turned out well for so many others. Other than double or tripling recipes to fill the crock enough, any ideas on "reducing" the size of your crock? Would putting in a ceramic bowl inside the crock work?
 
This one is really easy. I am going to be doing it today.

1: one and a half pound ham

1 cup of maple syrup

baby carrots or regular size carrots

Line bottom of crock pot with carrots.
Place ham on top of carrots.
Pour maple syrup over ham.

Let cook on low 6-8 hours.

My DH loves this!
 
Anybody have a crockpot recipe for round steak? I have a ton of steak and few ideas.
