Crockpot Recipes

I am a crock pot fanatic! I am using mine right now.

We are having shredded pork tacos tonight. VERY easy and super yummy!

1 3/4 to 2lb. Pork Loin (center cut)
1 Jar Pace Picante Sauce (16oz. I use the "medium" spice level)
1 Can Ortega Diced Green Chilies (4oz.)
Spinkle of Onion Salt

Put everything in the crock pot and set to low for 8-10 hours. I always go 10 hours because I usually cook this while I am at work. 1/2 hour to an hour before we are going to eat I shred the pork with two forks and let it sit and soak up the salsa. I serve this on small flour tortillas with shredded cheese and sour cream. YUMMY!

I make something very similar. I cube up the pork. Instead of picante sauce I use green salsa. I also sub out the chilis with green enchilada sauce. Served over brown rice with black beans stirered in. Very good.
 
I used to visit a website about home organizing daily, Flylady.com (or .net I forgot). She always had some recipe ideas as well!

Now that fall will be coming, this is a great reminder to pull out that crockpot!

My kids like this one:

one roast (I usually use an eye of round)
one package onion soup mix
one can root beer


Cook all day. It is yummy. I'm not one for meat a lot, but if it's easy and makes the house smell good, I'm all for that!

A lady has committed to using her crockpot every day for a year. It's well written, photos, recipes, updated daily.

I tried her beef curry recipe. Very similar to what my mother used to make. Next time, I'll make it like my mom's, which is just like what the Crockpot Lady makes but add in carrots, potatoes, and lemongrass.
 
My kid's favorite

1-11/2 lbs. beef stew meat
1 can Campbell's golden mushroom soup (not cream of mushroom!)
1 can Campbell's french onion soup

Brown meat in a skillet. Place undiluted soup (I sometimes double the soups) and browned meat into crock pot. Simmer on low 6-8 hours. Serve over egg noodles.

We use our crockpot couple of times per week during the school year. Most of the time I just toss in meat and whatever sauce I have around. This is our family's favorite though:

Swedish Dill Pot Roast (can use any kind of roast that will fit in the crock pot)

Roast
4 Tbsp dried Dill (in the spice aisle)
2Tbsp of vinegar
1/4 cup of water
1 cup of sourcream


Place roast in the crockpot with 2 Tbsp of Dill, vinegar and water. Let cook on low for 6 hours/high 3-4 hours or until done. Once meat is cooked take out of the crockpot. Add remainder of dill and sourcream while stirring the liquid. Once heated and combined, add meat back to the sauce and serve.

This recipe is wonderful with mashed potatoes, because the sour cream sauce tastes great over potatoes. The vinegar make even the toughest cut of meat tender and the dill is very mild tasting.
 
This is so easy and my family loves it,

5 cups boiling water
5 chicken boulllon cubes
1 stick butter
2 cans cream of chicken soup ( i use 98% fat free)
3 chicken breast whole frozen
put in crockpot and cook on low for 6-7 hours
add 1 large or two small bags Reames noodles and cook on low for 1-2 hours and then serve.

I find the noodles next to the frozen breads and biscuits at Kroger.
 
Someone posted Pepperoncini Beef sometime ago and I modified and simplified it to chicken because that's what I have at home. Then I made it into salad topping which I thought was really yummy and healthy...

Since I only made for 1 person (I made it in those baby crockpot :) ):

2 chicken breast (I defrost them in the microwave first to speed up the slow cooking)
1/2 packet of italian dressing mix
1/3 jar of Pepperoncini (12oz jar) with the liquid (the liquid is the best part).
Shred chicken when completely cooked through.

For the salad:
A bowl of Lettuce salad mix
2 TB of light sour cream
2 TB of chunky salsa
Then top the salad off with the shredded chicken.

YUM!!!
I think the only bad thing in this recipe is the sodium content.
But I'll drink a couple extra water to flush them out ... ;)

Set it & Forget it Brisket-

1 Brisket (approx 3 lbs, only 2 of us eat this & we usually get 3 meals out of it)
1 Can of whole cranberry sauce
1 packet of lipton's beefy onion soup
1 tsp of Horseradish (you can add more if you don't want itto be sweet)
wash & pat dry brisket place in bottom of crockpot
rub w/ horseradish
sprinkle soup mix
put cranberry sauce on top ( I sometimes use 2 cans)

cook on low 8-10 hours & then shred w/ 2 forks.
We love this! 1st meal we eat it w/ a starch(potatoes, dumplings,etc) & veggies
2nd meal is usually a sandwich on any bread (makes a great hot open sandwich on Italian bread!)
We had this last week. I love it!


Candy Pork
1-2lbs of any type of pork
brown sugar & honey mustard (I never measure these 2 ingredients)
put brown sugar & honey mustard in micro w/ some water & cook until thinned.
put pork in crock pot & pour sauce over it
cook 8-10 hours on low.
MMMMMMMM. I may make this tomorrow
 
I am a divorced man so I don't really know how to cook. But, this is easy and delicious.

Poor a little Olive oil in a skillet
Add half a bag each of diced onions and green peppers. sautee for a few minutes then add 1 lb of hamburger meat. Brown and strain. then pour into a large crockpot.

Then dice up a cheap steak. Turn up the heat on the skillet as high as possible and brown fast. Keeps the meat tender.

Add a large can of tomato sauce and a large can of finely chopped tomatoes.
add two cans of pinto beans and one of mushroom ends and peices.

Add a packet of two alarm chili seasoning.

then i add a beer, but you could add a little water. if you use beer all of the alcohol will cook out.

do not drain any of the juice from the cans.

Simmer on low for about 8 hours. It is delicious.

here is another that is super easy and delish.

a little olive oil and Sautee half a bag each of frozen chopped onion and bell pepper. then add one pound of hamburger meat.

Add large can of tomato sauce and 2 cans of rotel
Add 2 cans each of corn and pinto beans.
Really any vegitables will do.

Add a packet of taco seasoning and one of ranch dressing. then add water to fill out crock pot. Simmer all day.

Serve with fritos and cheese and sour cream for garnishments

Does anybody know about making a pork roast with a glaze in the crock pot? I have a great cranberry glaze that I got off of cooks.com and I was wondering if it would taste the same in the crockpot and when do you add the glaze? In the oven you add the glaze the last 30 minutes. Would it be the same for the crock pot?
Here's the regular receipe it's sooo yummy. With it I make cheesy scalloped potatoes (Out of a box), a green veggie, and a Mrs. Smith Dutch apple pie for dessert. MMMMMMM!

GLAZED PORK ROAST

3 to 4 lb. boneless pork roast (seasoned to taste)
1/2 c. brown sugar
1/2 c. orange juice
1 can cranberry sauce

Season pork roast to desired taste (salt, pepper, garlic powder, etc.) in roasting pan. Add about 1/2 cup water in the bottom of pan. Roast approximately 30 minutes per pound at 350 degrees uncovered. About 1/2 hour before roast is done, heat and stir 16 ounce can of cranberry sauce, blending orange juice and brown sugar in pan, then brush on top of roast. Before serving, spoon remaining hot glaze over pork.
 
This is an easy one.

Easy Rice Casserole

*1 can cream of whatever soup (chicken, mushroom, celery)
*1 soup can of rice
*1 soup can of milk
*chicken or pork chops

Mix first 3 ingredients together in slow cooker. Top with a couple of pieces (2 to 4) of either chicken or pork chops. Sprinkle with salt, pepper and paprika. Cover and cook on low for 6 to 8 hours.

This also works well with chicken breasts, if you are doing them for 8 hrs you have to put them in frozen though or they will cook to nothing ;) I usually just do a can or 2 of Rotel tomatoes (2/$1 at walmart)
 
This has become one of our favorites:

Crockpot "Roaster" Chicken

1 large roaster

Dry Rub
***This rub is awesome. I think I will use it all the time for roast chicken!
4 tsp salt
2 tsp paprika
1 tsp cayenne pepper
1 tsp onion powder
1 tsp black pepper
1 tsp thyme
1/2 tsp garlic powder

1 med onion, peeled and quartered
1/2 cup cooking sherry or chicken broth
2 TBS butter
2 heaping TBS cornstarch mixed with water to thicken gravy


Mix rub ingredients.

Remove inards from chicken and wash and dry. Sprinkle rub inside and out of bird and under the skin. Place in a large ziploc and marinate in fridge for at least 2 hours, overnight is better.

Place a rack in the crockpot (if you do not have one, cut veggies can be used or make a rack using crumpled tin foil...this is to keep chicken higher than juices).

Add butter and sherry to pot. Stuff bird with onion and place on rack. Cover and cook on low for 8 - 10 hours (my pot cooks fast so it only needed about 7 hours...meat thermometer should read 170 - 180).

Remove chicken to cutting board and let rest about 10 minutes.

Strain juices into a sauce pot and bring to a boil. Stir in cornstarch/water and keeping stirring until thickened.

Remove skin from chicken and carve.

Serve with gravy on the side.
