INGREDIENTS:
4 skinless, boneless chicken breast halves
2 tablespoons butter
2 (10.75 ounce) cans condensed cream of chicken soup
1 onion, finely diced
2 (10 ounce) packages refrigerated biscuit dough, torn into pieces

DIRECTIONS:
1. Place the chicken, butter, soup, and onion in a slow cooker, and fill with enough water to cover.
2. Cover, and cook for 5 to 6 hours on High. About 30 minutes before serving, place the torn biscuit dough in the slow cooker. Cook until the dough is no longer raw in the center.

This is an easy one.

Easy Rice Casserole

*1 can cream of whatever soup (chicken, mushroom, celery)
*1 soup can of rice
*1 soup can of milk
*chicken or pork chops

Mix first 3 ingredients together in slow cooker. Top with a couple of pieces (2 to 4) of either chicken or pork chops. Sprinkle with salt, pepper and paprika. Cover and cook on low for 6 to 8 hours.

I've never tried rice, what kind do you use? Is it mushy?

I've copied & pasted these recipies to a word file. With DD's figure skating and DS with football practice every day, I need to rely on my crockpot more. DS's football coach wants the kids to eat 2 hours before practice or wait until afterwards to eat. Practice is from 6-8, so that means he needs to eat dinner right after school around 4:00ish. DH and I are both teachers so that's next to impossible unless I fire up the crockpot. We need to keep our meals healthy, so I love the recepes w/ chicken breasts. I guess I need to take stock out in the 98% fat free creamy soups!

Thanks everyone!

We just made this last week! It was REALLY yummy. I actually threw in some frozen peas and carrots and that made it even better.

:goodvibes I can post a bunch when I get back! I love food and cooking

There is a great blog out there:

http://crockpot365.blogspot.com/

A lady has committed to using her crockpot every day for a year. It's well written, photos, recipes, updated daily.

I found a good sounding chix recipe and it's in the crock-pot right now. I'll let you know how it is later:

CrockPot Brown Sugar Chicken Recipe
It should be noted that this chicken has been named "Candy Chicken" in our house. I don't think my kids have ever eaten so much chicken in their lives. If you are bored with dried out, boring chicken, you must try this.

You simply must.

Go.

Now.

Go to the store and buy the ingredients.

go.

The Ingredients.
--12 boneless, skinless chicken thighs, or 6 boneless, skinless breast halves
--1 cup brown sugar (it's okay. you can brush your teeth after.)
--1/4 cup lemon-lime soda (stay with me...)
--2/3 cup vinegar (I used white wine, but think regular white would be fine)
--3 cloves smashed and chopped garlic
--2 T soy sauce (La Choy and Tamari wheat free are GF)
--1 tsp ground black pepper

The Directions.

Use a 5-6 quart crockpot for this recipe.

Plop the chicken into your crockpot. Cover with the brown sugar, pepper, chopped garlic, and soy sauce. Add the vinegar, and pour in the soda. It will bubble!

Cover and cook on low for 6-9 hours, or on high for 4-5. The chicken is done when it is cooked through and has reached desired consistency. The longer you cook it, the more tender it will be.

Serve over a bowl of white rice with a ladle full of the broth.

I'm not certain how kid friendly this one is, but it is one of our favorites - the kids like it too. :thumbsup2

4 green peppers (I pick peppers that will sit up well in the crockpot)
about 1-1/2 lbs. ground beef, uncooked
rice (as little or as much as you'd like)
1 jar of spaghetti sauce

Hollow out the inside of the green peppers - I just cut off the top and clean out the stem/seeds.
Mix together the ground beef (uncooked) and rice.
Stuff the peppers with the meat mixture.
Place the peppers upright in the crockpot.
Pour entire jar of spaghetti sauce over the peppers.
Cook on high for 4-5 hours or low for about 8 hours.

Your house will smell awesome!
Enjoy!

OK! Now I'm hungry again.

Tomorrow we're going to spend the afternoon setting up a tent, making a plywood floor, etc. for our 4-H club's showing and demonstration at the fair. I'll be going grocery shopping in the morning and Candy Chicken will be ready when we get home!

Haven't read all the posts, but here are three of my "go to" recipes when I just don't feel like cooking.

Brisket:

Slice up one large onion, put in crock pot, place brisket on top and dump one jar of Sweet Baby Ray's B'bq Sauce over it. Cook all day. The longer it cooks the better. Take it out and slice it about an hour before you eat and put it back in. It absorbs all the juices. We love this one!

Pulled Pork
For this I just use the McCormick pulled pork spice package. Put your pork in, mix the seasoning with vinegar, etc and dump over the pork. Shred it about an hour before you eat to absorb the juices. Another yummy one.

Can't get much easier than this.

We also love Pasta Fagiole Soup.

Brown 1 lb ground beef (turkey doesn't work great in this recipe).
Put in crockpot.
Add: 1 can of corn, carrots, celery, onions, one large can crushed or diced tomatoes with italian seasoning, 2 small cans of beef broth, one can of great northern beans. Cook all day. Right before you eat, add rice or small pasta. Makes a huge pot that tastes better the next day.

I never measure any of the ingredients, just dump in whatever you have and it will be great.

Enjoy!

TIG536 - regarding your post about the glazed pork roast. Allrecipes had a similar recipe that I also use.

Basically, you just slice up an onion and put them with pork roast in the crock pot. Mix one can of cranberry sauce with one small jar french dressing. Pour over it and let it cook all day.

The combination sounds weird, but it's very good and is kind of like a glaze.

We call this Cowboy Stew at our house:

1 - 1 1/2 pounds stew meat
4 unpeeled potoatoes, cut into 1 inch cubes
1/2 onion, chopped
1 28oz can of baked beans
salt & pepper to taste

Mix meat, potatoes, onion and seasonings in crockpot. Spread beans over meat mixture. Cover and cook on low 8-10 hours. This can be 'fancied' up with some additional ingredients such as: peppers, garlic, corn, bacon, additional seasonings.

*****

I tend to use our crockpot more like an oven. I make meatloaf, lasagna, whole roasted chicken, baked potatoes and corn on the cob without heating up the house. Plus it's nice to come home from work with dinner ready and waiting.

I bought everything but ran late doing errands, ran out to the fair, stayed longer, etc. so we just grilled one package of chicken. I have another one and I'll give it a try for either Saturday or Sunday.

Fall is coming and it will be crockpot time around here I am definately going to be trying some of these once a week.

How did it turn out?

It was pretty good. I tried it when I got home from work and thought it needed a little salt, so I put some in and let it "warm" a little longer. I had only used about 8 thighs, because we aren't big on left-overs, and I put them in frozen. I set my Crock-Pot for 8 hours on low and let it switch to warm after that. The thighs were still juicy and not overly dry (which has happened to me with breasts in the past).

DH and DS absolutely loved it!

I liked it over rice.

DD ate the rice plain.

Can't seem to get them all to like the same recipe.

I would do it again.

This thread has definitely motivated me! I have a beef roast in the crock pot right now that I'm going to shred up and put in the freezer. I also have a chicken recipe in another crock pot that we were going to have tonight, however, plans have changed. It has chicken, fat free sourcream and cream of chicken soup. Do you think I can freeze it?

Chicken Stroganoff

4 chicken breasts (I usually use frozen)
1 can cr of chicken soup
1 sm carton sour cream
1 envelope onion soup

Place chicken on bottom of pot, mix other ingredients pour on top.pour a little water on top. Cover and cook on low about 6 hours.

Serve over egg noodles.

This is SO good! My picky kids even eat it!!!

Thank you!!! I dumped this in the crockpot yesterday morning before work and came home to an already cooked meal! The kids loved it and ate up. We didn't even have leftovers.

Chicken In a Pot
I buy a pkg boneless/skinless chicken breasts, put them in the crock pot with 3 envelopes of Good Seasons salad dressing, leave it on low for maybe 5-6hours, or until it is done. I usually break up chicken with a wooden spoon or turner-it's very tender. Then I add 2 small cans of cream of chicken soup, or 1 large one if I have it. You can also use cream of mushroom, I don't like mushrooms that's why I don't. Also add a block of cream cheese. Let it melt, make some rice, and scoop it over it. My DH always insists on having peas with this too. LOL but I don't eat them either. Also, if making for a large group, add more chicken, another block of cream cheese, and 1 more can cream of chicken soup. Any questions, let me know. Enjoy

Pumpkin Pie Pudding......

15oz can of pumpkin
12oz can evaporated milk
3/4 C sugar
1/2 C buttermilk pancake mix
2 eggs, beaten
2 Tbsp melted butter
1 Tbsp pumpkin pie spice
2 tsp vanilla

mix all ingredients together and add to a greased crock pot. Cover and cook on low til temp reaches 160 degrees. Mine took about 4 hours. Serve in bowls topped with whip cream.
It is so yummy, like the pie but without the crust. Kind of a custard consistency.
Enjoy!
