Crockpot and Easy Meals "Index post 372"

I'm in the same situation. We are usually away from home 10-12 during the week. My DH suggested putting it on a timer. We are going to give it a test run over a weekend. Meanwhile, I'm going to do a search and see if they make them with built-in timers...that would solve all of our problems. :thumbsup2 I'll let you know if I can find one.

I bought a crockpot at Walmart that has a built in timer. I can set it on high for either 4 or 6 hours or on low for 6 or 8 hours. After that time it goes on warm setting and will stop the cooking, but keeps the food at a suitable temperature for eating.

I would experiment on the weekends to see what works for longer times. Meat that is in gravy or sauce will not dry out no matter how long it cooks. Soups or stews might be safe too.
 
Yep, they do have crocks with the built-in timers (I never paid attention, I guess). I've been researching them on Amazon and it looks like they have the one I like at Bed, Bath and Beyond. :thumbsup2
 
cowboy dinner:

1 1/2 pounds ground beef browned and put into a 9x13 cake pan. Add 1 lrg can of pork n beans (I use bushes baked beans). After mixing it together open country style biscuits (usually takes 3 of the smaller biscuits containers) place them on top of the mixture. Then lightly cover it with shredded cheese. Bake at 350 for apx 30 minutes.

My daycare kids love this and it's cheap & VERY easy.
 

Touch of Orient Chicken

5 boneless skinless chicken breast or 12 boneless skinless chicken thighs
1/2 C soy sauce
1/4 C light brown sugar
2 cloves garlic - minced
1/2 C ketcup or 8 oz tomato sauce

Place chicken in slow cooker. In a medium bowl combine soy sauce, brown sugar, garlic and ketcup and stir well. Pour sauce over chicken. Cover and cook on low about 6-8 hours.
I like to steam (in bag) frozen oriental vegetables in the microwave and then stir in for the last hour on high. (I don't cook it with the chicken because after 6-8 hrs on low the vegetables are too soft.)

I serve this with rice.
 
Here is an easy one.

Chicken breast and 1 bottle of BBQ sauce. Cook on low for 6 hours.

So yummy. If you cook for a bit longer the chix will shred and it makes great sandwiches. But, usually we eat it with salad and corn on the cobb to remind us of summer! ;)

Today I have new crockpot recipe that I found on the Hillbillyhousewife website and am trying fo the first time. It is a french dip beef roast. I can smell it right now and it smells divine. In case anyone wants the recipe it is

•3 lb Beef Bottom Round or Rump Roast
•1 onion, sliced
•1 packet of Au Jus Gravy Mix
•1 cup white wine or water (or beef broth)
•1/8 tsp garlic pepper
Place onion slices in bottom of crockpot, place roast, trimmed of excess fat, on top of onions. Mix together remaining ingredients, and pour over roast.

Cook on low 10-12 hours. Serve sliced thinly with onions on hard rolls with melted mozzarella cheese. Serve au jus on the side for dipping

I got my timer at Wal-Mart...works like a charm! LOVE IT and use it all the time!
 
Just read through the entire thread and printed a bunch of recipes to try.:)
Here is one of our favorites:

Easy Chicken Cacciatore

I pour a little of our favorite spaghetti sauce in the bottom of the crockpot, put in some chicken breasts (I always use frozen), put in 1/2 bag of frozen chopped onions/pepper mix. Pour the rest of the sauce over everything. Cook on low 6-8 hours.
Serve it over pasta. :)
 
Here's my contribution:

Chicken Paprikas
Chicken*
3 onions, chopped
3 T. paprikas
3 t salt
3 t pepper
4.5 c water

*Chicken. I use about 5 lbs of whatevers cheap, usually those whole leg/thigh things. I used to brown my chicken, then stopped, but I didn't think it tasted as good. Others didn't notice a difference. So now I brown it again, maybe it's psychological for me. I don't eat much of the chicken, I like the broth/dumpling part best.

Anyways, just put it all in the crockpot and cook 10 hours on low. Add 4 oz sour cream and serve with dumplings.

Dumplings:
2 eggs
2 c. flour
1 T salt
1/2 c or more water.

Drop by small pieces into rapidly boiling water. My family loves the dumplings so I double the recipe. I make a batch, take them out, let the water reboil and make another batch. I found letting them sit in the water too long makes them mushy.

Crockpot Chicken with Black Beans and Cream Cheese:

Ingredients
4-5 boneless chicken breasts

1 (15 1/2 ounce) can black beans


1 (15 ounce) can corn


1 (15 ounce) jar salsa, any kind


1 (8 ounce) package cream cheese

Directions
1)Take 4-5 frozen, yes, frozen, boneless chicken breasts put into crock pot.
2)Add 1 can of black beans, drained, 1 jar of salsa, 1 can of corn drained.
3)Keep in crock pot on high for about 4-5 hours or until chicken is cooked.
4)Add 1 package of cream cheese (just throw it on top!) and let sit for about 1/2 hour.
5)All done and enjoy!

Made this tonight and it was great! :worship::worship:We ate so much I think we may be sick.
 
Thanks for the index of all the recipes, it is very helpful.

So last we had the french dip roast in the crockpot and it was really good. Very flavorful and the juice for dipping the sandwich in what to die for. We served it with homemade oven fries with parmesean and garlic.

I think tonight we will try the crockpot chicken and dumplings.
