I'm in the same situation. We are usually away from home 10-12 during the week. My DH suggested putting it on a timer. We are going to give it a test run over a weekend. Meanwhile, I'm going to do a search and see if they make them with built-in timers...that would solve all of our problems.I'll let you know if I can find one.
I bought a crockpot at Walmart that has a built in timer. I can set it on high for either 4 or 6 hours or on low for 6 or 8 hours. After that time it goes on warm setting and will stop the cooking, but keeps the food at a suitable temperature for eating.
I would experiment on the weekends to see what works for longer times. Meat that is in gravy or sauce will not dry out no matter how long it cooks. Soups or stews might be safe too.
