This is my first time taking over the planning for the family so Im interested to see where my mistakes are. We will have our 3 and 4 year olds with us along with my parents and my bother, his two kids and his in-laws. This will allow us to swap out on the rides where the kids are not tall enough.

This will be our 4th visit in the past 6 years so trying to cram in as many rides as possible is no longer a necessity. We like a relaxed pace but still with a plan. The kids are also well behaved compared to most and enjoy strolling around in world showcase so the food & wine fest activities wont bother them.
 
This plan sounds do-able to me. We never book FP+ at AK because it is often not necessary, but if you don't plan on needing them at Epcot later that night, you may as well use them there.

I think you're alotting more time than necessary to many attractions, but I assume that is because this is just a loose plan and you will do things that don't have waits, like People Movier and Tiki Room, in between.

That's the plan. Rather than feel rushed to stick to the schedule, I figured, if time permits, we could stop at less desired (to us) attractions on the way to our intended one.

Definitely makes sense. Do you want to meet any characters? I would add those to your plans to make sure you don't miss them.
