Counter service during MVMCP?

We are thinking of going to MVMCP twice during our Dec trip and I was planning on using some of our counter service credits for dinner that evening. Does anyone know which (if any) of the counter service restaurants are open during the party? I was hoping for maybe Pecos Bill's.
