We love this place! The "show" is cute! We all loved the chicken/rib combo meal and thought the food was good. We also like the "goodie" bar... it was a wonderful way to make our meal exactly like we like to eat it! And the AC... rocked on the nearly 100 degree day at MK!
It is the same with any WDW Restaurant, CS or TS, there are "off days" at all I presume, and you will always have people that LOVE a place and others that HATE it, and others that just think it is SO-SO because we (park visitors) are all so different!

I agree. I don't think there is any place in Disney I "hate" but thre are certainly places I do not care for and really have no intention on dining there again.
Yes...I'll agree that Cosmic Ray's isn't stellar and Columbia Harbour house is superior.
But I don't think it's as bad as you say. If you aren't on the DDP it is a (relatively) good deal, and there are kosher options available. Then there's the aforementioned entertainment.
But unless you're in the area of Cosmic Ray's and not planning on heading in the direction of the Harbour house anytime soon, I would recommend the latter. Sandwhiches taste very fresh and do not feel like a "fast-food" meal. The chicken strips/fish and chips are another matter.
If you're in the area of Tommorowland but don't feel like Cosmic Ray's, the seasonally open Tommowland Terrace Noodle Station is a great option. Check the times guide to see when it's open.
