And here's the recipe as promised -- it's not chicken, er, egg salad but I like it!

Chocolate Mint Dessert

Ingredients:

* . 1 cup all-purpose flour
* . 1 cup sugar
* . 1/2 cup (1 stick) butter or margarine, softened
* . 4 eggs
* . 1-1/2 cups (16-oz. can) HERSHEY'S Syrup
* . MINT CREAM CENTER(recipe follows)
* . CHOCOLATE GLAZE(recipe follows)

Directions:
1. Heat oven to 350° F. Grease 13x9x2-inch baking pan.

2. Combine flour, sugar, butter, eggs and syrup in large bowl; beat until smooth. Pour batter into prepared pan.

3. Bake 25 to 30 minutes or until top springs back when touched lightly in center. Cool completely in pan on wire rack. Spread MINT CREAM CENTER on cake. Cover; refrigerate. Pour CHOCOLATE GLAZE over chilled dessert. Cover; refrigerate at least 1 hour before serving. Cover; refrigerate leftover dessert. About 12 servings.

MINT CREAM CENTER: Combine 2 cups powdered sugar, 1/2 cup (1 stick) softened butter or margarine and 2 tablespoons green creme de menthe (OR 1 tablespoon water plus 1/2 to 3/4 teaspoon mint extract and 3 drops green food color may be substituted for creme de menthe) in medium bowl; beat until smooth.

CHOCOLATE GLAZE: Melt 6 tablespoons butter or margarine and 1 cup HERSHEY'S SPECIAL DARK Chocolate Chips or HERSHEY'S Semi-Sweet Chocolate Chips in small saucepan over very low heat. Remove from heat; stir until smooth. Cool slightly.

CHOCOLATE MINT TRIANGLES: Cut dessert into about twelve 3-inch squares; cut each square diagonally into halves. About 24 triangles.

DOUBLE CHOCOLATE MINT DESSERT: HERSHEY'S Mint Chocolate Chips may be substituted for HERSHEY'S SPECIAL DARK Chocolate Chips or HERSHEY'S Semi-Sweet Chocolate Chips in Chocolate Topping. Omit creme de menthe in Mint Cream Center.

yeah. so, uh...i really never understand stuff like this. what is the problem with having a cross in a chapel? that's where it should live. seems any tradition based in the strength of christianity has a big old bulls eye on it. who do guys like that former college "leader" think they're making happy by their actions? seems to be some sort of afliction. and it seems to be contagious. i'll check to see if i have some "dummies-be-gone" spray under the kitchen sink...maybe that'll help.
That entire experience is a big reason why I truly believe it has nothing to do with inclusiveness and everything to do with rubbing out any kind of religion, period. Many of us suggested adding symbols of other faiths to the chapel (it's big, so you could have each on display in a separate area). Nope, wanted no part of that. Just the fact that it was a chapel, that it's called a chapel, is what got me more about it all. This was not a classroom, an office, a common area. It. Was. A. Chapel. Some of the justifications for it were lies as well (such as pledging to the Honor Code happened there and thus people were "forced" to be in the presence of a cross; wrong, that ceremony occurs in another room of the main building that the chapel is part of). He said one potential student literally ran out of the chapel while touring the school because he was offended by the cross, and he vowed to not attend the school. If you ask me, someone that intolerant of a religious symbol of any faith had no business being admitted in the first place. That is of course assuming the story was even true. :rolleyes1

I'm just glad that man is once again UNC's problem and not ours. :sad2:

Congrats! I see I'm with like company and go in freak out mode if I don't have a perfect paper/grade/project! Trust me, my school persona is much better at forming sentences than my social chat persona!

::yes:: I'm very Type A when it came to school. Always have been. Parents only told me to do my best, never put undue pressure on me. But I've still always been the type that had to be perfect. I just about had a coronary the two times I got a B in high school, and they didn't even count towards my GPA (it was a mid-semester grade; only our semester grades counted). :eek: I couldn't pull off straight As every semester in undergrad, but I still graduated magna cum laude.

Thanks for the vote of confidence! :thumbsup2 It is frosted and I'm walking away from it for the evening. DH came in when I was getting stressed and helped-what a great guy!:lovestruc

It will need a bit of touch up tomorrow, but it's done! Kids are in bed, and I can enjoy my adult beverage!

Please post pictures! I love to bake but presentation/decorating [as noted in above photo] is not my strong suit.....good for you!

Ok, chicken salad recipe coming up....but I have to warn you that you may not be able to eat any other chicken salad after this one :snooty: :laughing:

Forgive me for not just cutting and pasting, I've tweaked this recipe for awhile so I don't know how to write it in recipe form.

BTW, I usually double or triple the recipe so you can do so and it will still come out good.

-3 or 4 cups of chicken breast (I cook my own every time covered in chicken broth til tender and juicy - don't under and don't over cook! I take it out of the cooking broth and cut it then in cubes - but I shred half of it so there's texture and the mayo holds better. I think this is what they mean when they say "the love" in a recipe, or it's my OCD....I'll pick "the love" ;) :laughing: )

-2 T diced green pepper (teeny tiny pieces)

-2 T diced celery (teeny tiny pieces)

-2 T sweet onion (teeny tiny pieces)

-juice of 1 lemon (fresh only)

-salt and pepper to taste

-mayo (real Helmans. and I usually have a "feel" for how much is enough, but I'd guess about 2/3 cupish - enough to make it come together, but not enough to overpower the flavors)

-1/2 to 1 c. red grapes halved (I only use grapes, but you could use mandarine oranges, walnuts, or any combination of the three)

Ok.....

so, cook the chicken and while it's cooking dice all the veggies. This part's important - dice chicken warm and mix with veggies, salt and pepper and lemon juice (the warm chicken helps bring out the flavors of the veggies IMO). Let cool in fridge for a couple hours then add mayo and grapes. Mix well.

I serve mine in lettuce wraps, mini-croissants, or just dish it out. :love: (ok, I'll confess - I've been known to put it on a dish and scoop bites of it with potato chips, delicious but sinful!)

My good friend makes chicken salad with grapes - she's the first person I ever knew to do it. I confess now, that grapeless chicken salad doesn't really taste that good to me! I love that sweet/savory combo.

And now I have your recipe to try - thanks, Breezy!

And I'm always amazed at their zeal in trampling those religious symbols - very 'religious' if you ask me....

And wonderlanne is right - if they could find somewhere else more constructive to direct their energy....what a testimony to their anti-theism that would be.

It's funny - at work, the person most responsible for decorating and organizing all of our Christmas-y stuff is Jewish. I guess someone needs to tell her that she should be offended at that Christmas tree she keeps putting up.

Oh, and don't the atheists know that Christmas trees are pagan in origin?

I've got to reply to this for two reasons - I want it to show up on yet another page and I'm really thankful I was not drinking anything when I saw this...:rotfl: :rotfl: :rotfl:

so, unless thse honor code pledgers were vampires, how could a cross possibly be a problem? i think it is all a big put on.

i don't live far from sacramento where some guy didn't want the pledge of allegiance said in his daughter's school, because they don't believe in God, and the pledge contains "under God". couldn't figure out why the entire school had to suffer as a result. if they don't believe in God, then saying "under God" doesn't really have a meaning to them and shouldn't matter. or, why not take a breath while everybody else says "under God", because the rest of the pledge would still be relevant. but noooooo.....people like this have to take the pleasure away from everybody. great bunch o' twits.

i'm practically pagan, so maybe that's why i like Christmas trees so much (two seven foot trees, three four foot trees, a little kitchen tree, and one in each bedroom, tiny ones in each bathroom). and i love the two creches i have inherited (one of which was hand made stunningly by my mother), but they are magnificent works of art...in no way are they offensive to me, and i am proud to display them at Christmas time.

people who want to destroy things they don't believe in must be either envious or evil.

Oh, yum. I'm going to make this next week. Sounds delish. Thanks so much Breezy.

Happy Friday! :)

I've been frantically getting ready to have family over tomorrow to celebrate DD's 5th birthday. My baby will be 5! It's a happy/sad feeling. I tried to talk her into staying 4, but she didn't buy it! :lmao: Ok, is anyone else insane like me-we're having family over tomorrow and some of her friends over on Wed. (her actual birthday). 2 birthday parties-I need to be committed! :upsidedow

I need lots of happy thoughts...I'm going to attempt to decorate a cake to look like Rocket from Little Einsteins. My cake decorating skills are mediocre at best, but I found a guide online that tells me how to do it. If it all flops, I did see ready made cakes at Super Wal-Mart today that I can scoop up!

All Conservatives are welcome here! :thumbsup2 I am a Christian, and that may come through in my posts, but I don't mean to run over anyone with my beliefs and I do enjoy discussing the Bible and issues of faith in a friendly, non-confrontational matter. For that matter, I'll throw my 2 cents in on pretty much any topic, whether I know about it or not! :rotfl:
I can't wait to see your cake! I have a four year old too - though he'll be five in February. It's such a fun age! Have fun at both of your parties.

Why is that so funny? It's not like SP wanting the job or anything. Now, THAT'S funny.
Okay.

i don't understand how a Christmas tree can be offensive to people who don't believe in Christian tenets. to those people (me, the ford family), it is then a pretty, decorated tree. nothing offensive about that.

i'm not jewish either, and their stuff doesn't bug me...to me a mennorah (sp) is just a candelabra...what they do with it and what it symbolizes for them is their business. nothing offensive about it.

what i DO find offensive is idiots going around trying to take away the pretty tree and the candelabra because it DOESN'T mean anything to THEM. it's just like the t.v., or radio, or this thread: if you don't like it, instead of trying to destroy it, just move on...
Exactly.

My husband doesn't like Christmas trees because he has to haul it in from the outside, spin it around until it's just perfect (to me of course) and get it perfectly straight in the tree stand. He'd be fine without Christmas trees - lazy bum.

I think what it does mean for some of them is an opportunity to exhibit some control. Look at me, I have the power to alter something.
They offer altering classes at many craft stores. If they want to alter something, they can alter a lunchbox or a mailbox. It would be productive and cute.

yup. they COULD also have the power to donate a coat or help in a soup kitchen or volunteer for hospice or something equally helpful. their loss.
Okay, I like this better.

To those of you who asked about my chocolate mint dessert - I made it for a party tonight and they turned out beautifully - a true hit!

And I took pictures, of the dessert that is --

I'm trying my hand at the whole food-styling, picture-cropping thing....and realize that it isn't time to quit my day job yet....
Gorgeous! Are they yummy too? Was it hard to make?

So I've got two new recipes for next week. Thanks guys!

I haven't been watching TV today (company here), but does anyone know what happened with the Big Three today? Just curious.

Oh, and I agree with all of you about the Christian symbols - I don't get why people get their panties in a wad over a Christmas tree. It's just a decorated tree - and honestly, it really has nothing to do with Christmas or Jesus, so what's the big deal?

Sounds like my undergrad. 4.0's.. then there was this little tiny class called statistics... I like to pretend that I liked it so much I took it twice! I swear I still have flash backs. I was too many years removed from algebra when I took it. Thirtysomethings need help!

:rotfl2: Good point.

You can't really compare a story of mine to the Pledge, but in my sorority we had a cheer that included what I thought was profanity in it. Rather than demanding it be changed, I just didn't yell during that part of the cheer. Everyone who wasn't bothered by it went about their business and had fun with the cheer, and I didn't feel like I was saying something I found offensive. Problem solved.

::yes:: I mean, I know a few Christians who refuse to put up a tree because they don't see it as being something legitimate to display during this time of year. They love nativities, but won't display a tree. They don't, however, run around demanding all trees be taken down, not even the huge ones in local public parks, centers, etc.

Stats was the downfall of many people in my graduate program. By the time I got my Master's, I had taken 5 different Stats-related classes though, so it wasn't a problem for me. I was very lucky in that I had a background in it.

My main Stats class in undergraduate was an awful experience, though! We had quite possibly one of the worst professors on the planet. She was terrible, and it's a wonder I learned anything at all in her class. Actually, I didn't. I taught it all to myself, and we all had some assistance from the TA during our weekly lab. Hopefully she has since retired! :eek:

there was a jewish family in our neighborhood when i was little. they loved Christmas trees. but there ya go...they were jewish. so every year, they decorated their "hannukah bush". :rotfl2:

I find this "all conservatives are welcome" notion interesting. Sure, there are various disagreements between conservatives, and yet we unite over the approach that fundamental precepts are known through tradition. This means we believe in universal standards and make hardline judgments, even though we sometimes disagree what those standards are. Because of this, we debate issues instead of trying to embrace diversity, knowing that the truth is at stake.

Starting an "I'm tired of a disagreeable topic (such as God-talk)" conversation comes across as whining. If you would like to debate atheism vs. Christianity, then let us begin. My hunch is that no one here is ready to challenge other people's faith on a Disney forum, and therefore we would rather simply acknowledge that the differences exist and keep the peace through respecting the persons who hold those differences.

As for the faith of our forefathers, my historical studies show a broad spectrum from John Jay, who served as the president of the American Bible Society, to the vitriol towards Christianity of Thomas Paine. I would suggest examining the state constitutions of the time, most of which acknowledged the lordship of Jesus Christ. Even the Founders of questionable faith recognized Christianity as the most conducive of all religions for a virtuous society. Freedom of religion was to be the first freedom, allowing Church and State to both flourish in their respective spheres, cooperating when appropriate, but hopefully avoiding the corruptions that occur when one sphere usurps the other.

Before heading to bed, I just wanted to brag on my kids a little. :)

As we came out of swimming lessons at the Y last night, they noticed the Giving Tree set up in the lobby. They love Christmas trees so we stopped to admire it, and as they looked at the paper ornaments (with the childrens' particulars on them) they asked if they could help some kids. They searched the tree until they each found a child the same age and sex as themselves, and then we headed straight over to Target to shop. The ornament listed each child's special toy wish and clothing size, and asked for one toy and one clothing item. The kids were excited about finding exactly the toy their child wanted, and picking an outfit for them. We also raided the dollar section for a stocking hat and matching gloves for each. For $2 how can you go wrong? I figure they may not need them, but I'd rather know a child had too many gloves and hats than not enough right? Besides, if they are anything like my kids they will come home with only one glove at least once this winter.

Anyhow, I was just proud of my kids that they wanted to help, and it was a really warm fuzzy feeling watching them choose things they really liked themselves, for someone else. My son's "buddy" wanted legos, and my son insisted that we get the extra large super mega tub of them just like he has. I was kinda tending toward the smaller tub myself but he wasn't having any of that. :laughing: Well...he was right wasn't he? It could be the only toy this child will get this year, we better do it right.

Tomorrow is swimming again, and we will deliver our gifts back to the Y. :santa:

Thanks so much for this recipe! My hubby loves chicken salad, and we get this really good one at the local Amish farmer's market, but it is really pricey, so I can't wait to try this!:)
