Yes - there is.. :) I don't remember if I copied it down or not though.. I think it was in a magazine - not a cook book..:santa:

My mom used to make them a long time ago. I just talked to her this afternoon and she said she was going to make some. Since she will probably give some to us I won't bother making any myself.


I am however, looking for a recipe my friend's mom used to make. It had those skinny fried Chinese noodles, peanuts (I think) and chocolate. It's been years so I don't know if I'm remembering it correctly. Anyone know what I'm talking about?

Ricotta Cookies

Preheat oven 350 degrees.

In a large bowl cream:

1 stick margarine or butter
1 and 1/2 cups of sugar
1 cup ricotta cheese (or more)
1 egg
1 teaspoon vanilla

In a second large bowl mix:

1/2 teaspoon baking soda
2 cups flour
1/2 teaspoon salt

Add this to creamed mixture or vice versa and blend till well mixed. (Dough may be a little loose - that's fine.)

Drop dough by teaspoon full onto ungreased cookie sheets.

Bake at 350 degrees for about 15 minutes. Watch carefully - when bottoms brown nicely you can tell when the cookies are done.

Remove to racks to cool.

Does anyone have a good potato chip cookie recipe?

I just looked this up for you. Never tried it though.




Potato Chip Cookies
2 cups all purpose flour
1 tsp baking soda
1/4 tsp salt
1 cup butter, room temperature
1 cup sugar
1 large egg
1 - 1 1/4 cups crushed potato chips

Preheat oven to 350F. Line a baking sheet with parchment paper.
In a large bowl, cream together butter and sugar until fluffy, then beat in the egg.
In a medium bowl, whisk together flour, baking soda and salt, then stir into butter mixture. Stir in potato chips.
Drop tablespoonfuls (1-inch balls) of dough onto prepared baking sheet, leaving about 2-inches between each cookie to allow room to spread.
Bake for 12-15 minutes, until light golden.
Cool completely on a wire rack before storing in an airtight container.

Makes about 3 1/2 dozen cookies
