Chicken-fried steak

The sauce/gravy thread got me to thinking about gravy, and then that turned my thoughts to brown vs. white gravy, the latter of which always makes me think about chicken-fried steak.

So anyway. . .Is it true that in some parts of the U.S. chicken-fried steak is a rarity? Is it just a southern thing? I love a really good chicken-fried steak ::yes::. Bad chicken-fried steak is gross, though, with either tough meat or greasy, flaky breading :crazy2:.
 
In some places white gravy is a rarity!! My Dh and BIL are form San Francisco and had never had it until my mother made sausage gravy for breakfast on morning!!!! I am still in shock that they had never even seen the stuff and at first refused to try it!!!

I don't see it a lot up here , but it can be found...My mother likes it but she's from Ohio
 
I never heard of white gravy growing up in the suburbs north of Chicago. It is all over here in NC and lots of people order biscuits and gravy for breakfast, like my daughter.:crazy2:
 

I don't even know what it is. I have heard of it but have no clue. Sausage gravy is awesome though! So is chipped beef.:thumbsup2
 
I'll admit, I don't look for it on menus around here as I prefer to make it homemade! But I definitely grew up with my mom making it and I'm from the midwest.

My favorite thing is a good chicken fried steak and white gravy. I used to live in Ohio (for about 2 years with my ex) and we always had the white gravy and fried steak there.

Good chicken fried steak is to die for....YUMMY! I think I will fix it this week, its been awhile since I made this.
 
My mother made the best white gravy with fried chicken. For some reason (and don't ask me why) she called it bulldog gravy. Maybe because it was white and since it was made with milk. Unfortunately, I can not master her gravy. I sure do miss it some days.
 
Hard to find in restaurants around here, unless you go to a Cracker Barrel type place. I do like it but wouldn't have the faintest idea of how to make the gravy though!
 
Not much white gravy in NJ. But brown gravy and fries, oh yeah:thumbsup2

You are honestly the first person (in all of my 40+ years) that I have heard say they like chipped beef! I love it on toast-how about you?

Start the gravy with drippings from the meat, then cook in some flour, flavor with salt and pepper, and then thin with milk.

Mouse House Mama, I think it is a thin cut of steak breaded in coating, similar to how you would coat chicken to be fried, then served with a white gravy. White gravy is (I think!!!) a flour thickened cream-based gravy with crumbled sausage as the meat part. Southern friends please corrrect me if I have this wrong.

Anyway, here is my question: what cut of steak is used for this dish? And, is it better than fried chicken? Because fried chicken is just so good. Does country gravy not go with fried chicken?? Inquring northern minds want to know!
 
I love country gravy as I call it. I love it with fries. I don't even like FF's without it. I usually get it at Dennys which also has a good Chicken Fried Steak.
 
Take a cheap cut of flank steak pound the heck out of it with one of those texturized meat mallets. (it needs to be thin so that it cooks through in the time that the coating gets cooked without burning) Dredge in egg and seasoned flour (usually salt, pepper and sometimes garlic powder) then stick it in a skillet with hot oil.
When it's crispy and just past golden brown take it out to rest on paper towels.
Drain off most of your oil till theres a couple of tablespoons of oil and the bits left in pan then make a pan milk gravey with pepper and salt to taste. Combine the two and serve with okra and mashed potaotes

YUMMY.
Basically it is prepared like fried chicken (hence chicken fried ......)

Another one here that loves chipped beef on toast. Being a Navy brat, it hit the table at least once a month.
 
We live in Maine and my mom makes a really good chicken fried steak. We lived in Texas for a year and that's where she learned to make it.
