I was diagnosed this week with celiac disease and I need to start eating right. I will be having an appointment with a nutritionist but right now my DR is trying to get my insurance to cover it, so probably not til next week at least. In the meantime I am trying to do some research and start eliminating the "bad" foods. Can anyone who knows anything about celiac recommend any good websites? Also if there are certain foods you've tried that are close to the real deal, or just as important, anything so yucky I should avoid it, I would appreciate that too. Just a quick peek through my cabinets, pantry and freezer and it is quite obvious I will need to be doing some shopping soon. I have a feeling that rice and beans is going to get old fast :lmao:

My DDil has it and I am learning more about what she can and can't eat. I know she doesn't eat wheat, so all breads and buns are out. I know she eats lots of chicken!

It really is tough. I'm also vegetarian and have other food allergies so it should be special  ;)

By the way, I think it's really sweet that you're learning about it for your DIL!

my cousin has it. it's very hard to find food without gluten in it (wheat seems to be in everything!!). although, a lot of places now are labeling the foods that are gluten free, which is great! if you have a trader joes or a whole foods (they have gf recipes at the front desk area) around you there are tons of things there that are gluten free, even breads, pastas and pastries. you'll find out that some gluten free things are really terrible tasting. my cousin tells us of all the horrors of trying new things, especially breads. i remember her eating bread on the disney cruise that was gluten free and we all tried it and it was terrible, like a brick.

this is an ok website that has info about gluten free stuff and even links to other gf blogs.

i found a great gluten free bakery in california from that website, and i sent my cousin some goodies for her birthday. she said they were excellent.

good thing to know is that disney is extremely helpful when you inform them that you have celiac! the chefs came to the table when we had dinner and walked her through the menu and the buffets. so if you're going to disney any time soon you're all set! haha.

good luck!

My Niece has it. She is 2 now and they discovered it right around her first Birthday I think. She wasnt thriving and was really struggling with a lot of things.

She is doing amazing now, she is a whole different child!

There is a gluten free store that I shop at when they come to visit. There are actually a lot of choices there from cereal to noodles.

I would caution you to take what you read online with some consideration. There is a lot of scary stuff out there so you have to measure out what is important and what is just there to freak you out kwim?

Do you have any Wegman's Grocery stores near you? They have a great GF area. My mom is a celiac so I know what you are going through. Good luck with everything!
