Carbs in Zucchini???

I let a friend borrow my ATkins book. My neighbor has an unbelievable garden. She brought over some zucchini. I did not have the heart to tell her that DH just started ATkins again after our WDW trip.

I love zucchini and don't want to waste it.....anyone know the carb content???

YUM! I slice my Zuchinni and stir fry with lots of butter then top with shredded cheddar cheese! Delicious.

I've also heard of people slicing it long ways and using in a lasagna recipe in replace of the noodles. I've never tried that but it sounds so good.

Oh yum! I adore Zucchini!! I really love it in stir fry!! :)
 
I like to slice zuccini lengthwise in half and cook it on the grill...you have to cook it on low heat though so it doesn't burn before it cooks.
Butter it before you put it on the grill, then when it's cooked,
butter it up some more and poke some holes in it to let the butter in too (for those of you on low-carb) it has awesome flavor!

No pan to wash either! :rolleyes:

I think that zucchini is an excellent carbohydrate investment. I like it sauteed in olive oil the best :)
 
I slice mine lengthwise, thinly of course and then put it on the grill and cook it for a while and then squeeze lemon juice on it and eat it! I love it this way! (I don't put anything onit either when I cook it!)
 
I love to slice my garden fresh zuchinni then I sautee it in olive oil until tender and slightly browned. Then I toss some diced up fresh garden tomatoes into the pan and cook until it begins to break down. Add some salt, a little garlic powder, then serve with some sprinkled FRESHLY grated parmesan on the top!

The recipe sauteed in olive oil sounds great. Going to try it today.:D
 
I ended up making Zucchini Boats.

I pulled all the inside out, sauteed that in garlic and olive oil and also cooked up some ground burger with garlic and olive oil, sprinkle parmesean cheese on it and baked until soft (zucchini still slightly crunchy). I then placed provolone cheese on top to melt.

DD #1 who Hates veggies absolutely loved it!!!
 
I wanted to bump this, these are a few great ways to prepare zucchini!!! :)

I'm going to try the olive oil sautee with some tomatoes and then I'll leave the tomatoes out of our dinner salad! :)
