Canoeing in central Florida

We are interested in spending part of a day canoeing during our trip in August. Can any of you locals or frequent visitors give me any advice? I know there are several State Parks that offer canoe rentals, as well as several locations in the Ocala National Forest. Any opinions on which place is best? We are willing to travel up to 90 minutes from WDW, but would prefer to keep it within an hour. I've checked out some websites, but I can't find any information on what rentals cost. We'd like an easy route as we have very little experience and I am not in the best shape. I also haven't been able to determine whether these places provide transportation back to your starting point or if you have to turn around and row back. And I'm wondering if canoeing in August is even possible or would bugs, heat or low water levels make it just too miserable? Any info/opinions would be greatly appreciated.
