Or will I only be able to book for the first day we're there, then have to stay up late each night after for all of the other days?

we only have one park day but I'm pretty sure you can go ahead and book for the respective days.. try and find out lol i noticed when it asks when i want to change it makes me use a drop down and select the date of my fast pass I'm assuming when more than one ticket as been linked you have more dates to choose

You can only book FP at 60 days for WHOLE TRIP if staying ON SITE.. If staying OFF SITE you must book each day of FP use at 30 days out!:)
True, but the OP said 60 days so I did assume this was an onsite stay.

i'm also wondering , my 60 mark is on the 1 and then i should be able to book my entire stay from jan 30-feb 7 so i would think that when i went to mde i should see some date able to book in jan ? and nothing , so does that mean that as soon as my day come up all will open ?? I have everything linked and ready to go i just find it strange? am i stressing about nothin?

Yes, that's exactly how the system works.
