Breaks during Christmas week

We will be at WDW 12/24-12/31. In the past, we have taken breaks and headed back to our resort for a little R&R. However, with the large crowds that are usually expected that week, is that a possibility?! We don't want to be unable to return back to the park if it reaches capacity.
Any thoughts and tips would be much appreciated!

You can leave and return to the park you have reserved as many times as you wish. If you're hopping, Disney could suspend hopping, but so far that has happened only once (on the day of the 50th anniversary) and only for a few hours. IOW, reserve the park you most want to be in!
