Breakfast Casserole Recipe for Christmas Morning?

I made that a couple of months ago and mine came out awful. It was just sickening sweet and soggy for some reason! Not ready to tackle that one again.

That is why I have talked myself out of trying to make French Toast Casserole. I am so afraid of it being soggy and mushy that I just can't make myself try it. I like regular French Toast, but have to be very careful it is cooked good and not soak the break to much (or it ends up being mushy). :sick:

My DD loves the casserole made with the cresent rolls and sausage so much, and since it is so easy to make, we make it often for dinner. Didn't want to do the same one for Christmas day so this is what I've decided to make:

Paula's Baked Potato Omelette Casserole

1 - 20 oz package frozen seasoned hashbrowns, thawed
1 - 16 oz package of sausage, cooked, crumbled and drained
10 slices of bacon, cooked and crumbled
1 - 8 oz package shredded mozzarella and chedder cheese blend
10 large eggs
2 cups half and half
1 tsp dried basil
1 tsp dried oregano

(I leave the basil and oregano out and just use some garlic powder, onion powder and pepper.)

Preheat oven to 350 degrees. Lightly grease a 13x9x2 baking dish. Place hash browns in pan, pressing gently. Layer in sausage, bacon and cheese on top. In a bowl, whisk eggs and remaining ingredients. Pour evenly over casserole. Bake for 35 to 45 minutes or until lightly browned. Serve immediately.
 
We sometimes make this:

1 lb of sausage
1 block of cream cheese
crescent rolls

Brown sausage
Add cream cheese to the skillet mixing in until melted
Layer of crescent rolls
Add the sausage mixture
Cover with another layer of crescent rolls
Bake in the oven until the crescent rolls brown.

This is what we make too ... we're not big on eggs/cheese in casseroles and this one is sooo yummy!
 
I always make this. I set it out the night before. Watch out it doesn't raise up and overflow!! I put the roll dough in frozen the night before. I also leave out the nuts, but that's because we don't like them in it.

Butterscotch Bubble Loaf

24 Rhodes White Dinner Rolls, thawed and halved
1/2 box Butterscotch Pudding Mix, non-instant
1/2 cup Pecans, chopped
1/2 cup Brown Sugar
1/2 cup Butter or Margarine


Thaw rolls until soft (about 2 hours at room temperature). Spray bundt pan with non-stick cooking spray. Cut dinner rolls in half and dip in dry pudding mix. Arrange rolls in pan, alternately arranging and sprinkling pecans. Sprinkle remaining pudding mix over the top .

Combine brown sugar and butter; heat together until butter is melted and a syrup is formed. (Microwave about 1 1/2 minutes.) Pour syrup over rolls. Cover with plastic wrap that has been sprayed with non-stick cooking spray. Let rise until double in size or even with top of bundt pan. Carefully remove wrap. Bake at 350° F for 30-35 minutes. Cover with foil the last 15 minutes of baking. Immediately after baking, loosen from sides of the pan with a knife and invert onto a serving plate.
 

A lady I work with always makes these breakfast muffins..they smell delicious

1 lb sausage..browned and drained
2 0r 3 green onions sliced
1 cup shredded cheddar cheese
1 can cheddar cheese soup (she used fiesta for flavor)
2/3 cup milk
1 egg
1 tsp ground sage
3 cups Bisquick

Mix togeter..batter will be lumpy and sticky...fill muffin tins..bake at 350 for approx 20 minutes
 
This is exactly what I am making YUM! I like the fact you can do it the night before and just throw it in the oven when you are opening gifts:thumbsup2
I make this every Christmas. The family loves it.

3 c. frozen hash browns
1 lb. sausage
1 med. chopped onion
12 eggs, beaten
2 c. milk
4 c. grated Cheddar cheese
Garlic salt
Pepper

Cover bottom of greased 9 x 13 inch dish with hash browns. Brown onions with sausage; drain and spread over potatoes. Cover with cheese. Mix eggs and milk. Season to taste. Pour over mixture in dish. Refrigerate overnight. Bake 50 minutes at 350 degrees.

Here is an easy dish that has become a family favorite at our house! We ALWAYS have it Christmas morning and Easter morning ... and once in a while in between. :goodvibes

EASY EGG BAKE

2 c. cooked ham (or sausage)
8 oz. shredded cheddar cheese
8 slices bread, torn in pieces or cubed (or use up leftover hot dog/hamburger buns, day old or 2, 3 is fine)
6 eggs, slightly beaten
2 cups milk
salt & pepper
2 cups crushed corn flakes
1/2 c. melted margarine.

1. Add milk to eggs.
2. Mix egg mixture, salt & pepper together.
3. Put bread pieces in bottom of sprayed 9x13 pan.
4. Sprinkle ham over bread & sprinkle cheese over ham.
5. Pour egg mixture over all.
6. Cover pan & refrigerate overnight.
7. The next morning, take pan out of frig an hour before baking.
8. Combine 1/2 c. melted margarine & crushed cornflakes. Sprinkle over egg dish.
8. Bake at 350 degrees for 45-50 minutes. Watch to be sure cornflakes don't brown too quickly. May want to cover with foil for first 20 minutes or so.

Easy and VERY yummy!

Subbed turkey sausage for ham (that's what was in the freezer!) RAVE reviews from all family members...VERY filling!
