Breakfast Casserole Recipe for Christmas Morning?

Hash Brown Casserole like Cracker Barrel's

Serves 8
10.25 oz condensed cream of chicken soup (or your favorite)
8 oz. colby cheese -grated
1/2 cup melted butter or margarine
1 sm onion, minced (I use even less)
1 tsp salt
1/2 tsp black pepper
2 lb bag frozen shredded hash browns

spray a 13" x 9" x 2" baking pan with non sick cooking spray; set aside.
in a bowl, combine soup, cheese, butter, onion, salt and pepper.
gently fold the potatoes into the mixture and pour into prepared pan
bake in a 350 degree oven for 35-40 minutes, until heated through and top is browned.

This is a favorite and we'll make this Christmas morning with scrambled eggs and sausage links.
 

This sounds perfect for us!! I'll make some cinnamon rolls and have some juice to go with it! YUM!!! Silly question, do you use frozen hash browns or do you thaw them out first?

I take the hashbrowns out of the freezer and put them in the frig for a couple of hours before I make it.
 
just a tip:

I pre-cook bacon and sausage a day or two before so on Christmas morning all I have to do is make some eggs and this year waffels for the waffel bar.

Oh and pop the pilsbury cinnamon rolls in the oven! A Christmas must in our house. These are our breakfast appetizer:goodvibes
 
Someone asked before about making ahead...I always put together ALL of my Christmas breakfast/brunch casseroles the day before...ALWAYS. Refrigerate overnight and then just pop in the oven in the morning. It makes things so easy!

My grocery store carries a maple swirl bread that is awesome to make french toast with and/or to use with the casserole.

For the actual Christmas morning (just dh, ds and myself) I'm making monkey bread, fruit and omelettes.

Ingredients:
1/4 cup melted butter
1-1/2 cup milk
1 teaspoon salt
dash pepper
3 eggs
1/2 cup Bisquick baking mix
1 cup Swiss cheese, shredded
1/2 cup bacon (about 6 to 7 slices pre-cooked), cut or broken into small pieces. (I use 1/2 cup of real bacon bits, ham, or cooked sausage).
Mix first 5 ingredients together and beat well (wire whisk works well). Stir in Bisquick. Pour into 9-inch (deep) cake pan. Put meat and cheese on top of mixture (do not mix). Bake at 350 degrees for 45 minutes.

Best when made the night before and served by heating in microwave with plastic wrap covering.
 
I make this every Christmas. The family loves it.

3 c. frozen hash browns

12 eggs, beaten
2 c. milk
4 c. grated Cheddar cheese
Garlic salt
Pepper

Cover bottom of greased 9 x 13 inch dish with hash browns. Brown onions with sausage; drain and spread over potatoes. Cover with cheese. Mix eggs and milk. Season to taste. Pour over mixture in dish. Refrigerate overnight. Bake 50 minutes at 350 degrees.

I make that too! I just got back from buying the stuff;)

All of the other breakfast casseroles sound so good too, I will have to make some of them on Sundays before church.
 
We sometimes make this:

1 lb of sausage
1 block of cream cheese
crescent rolls

Brown sausage
Add cream cheese to the skillet mixing in until melted
Layer of crescent rolls
Add the sausage mixture
Cover with another layer of crescent rolls
Bake in the oven until the crescent rolls brown.

Thank You Thank You! I've got the stuff on my list for tonight and since DD21 will be home this shouldn't be too hard to make Christmas morning. I'm excited to try it, it sounds so good!! :) I've got homemade hash browns in my freezer, that's why I asked. :)

I made that a couple of months ago and mine came out awful. It was just sickening sweet and soggy for some reason! Not ready to tackle that one again.

it's not a casserole but we make sausage bread. make a day or 2 ahead of time and just rewarm. cook up about 1lb ground sausage(your choice but we prefer hot). roll out pizza dough and spread sausage on top. top with mozzarella and garlic powder. then roll it all up. bake at 400 for approx 25 min. Yum!!

Since it's called "french toast", that means it's not really bread pudding, right?

Because eating bread pudding for b'fast is decadent, but french toast casserole style, that's fine!

As with bread pudding, it would probably come out better with bread that's a bit stale.


Also, if we have THAT for b'fast, is it still OK to have "dressing" with dinner? (we're vegetarian so there's nothing to stuff, hence dressing instead of stuffing)

Here is an easy dish that has become a family favorite at our house! We ALWAYS have it Christmas morning and Easter morning ... and once in a while in between. :goodvibes

EASY EGG BAKE

2 c. cooked ham (or sausage)
8 oz. shredded cheddar cheese
8 slices bread, torn in pieces or cubed (or use up leftover hot dog/hamburger buns, day old or 2, 3 is fine)
6 eggs, slightly beaten
2 cups milk
salt & pepper
2 cups crushed corn flakes
1/2 c. melted margarine.

1. Add milk to eggs.
2. Mix egg mixture, salt & pepper together.
3. Put bread pieces in bottom of sprayed 9x13 pan.
4. Sprinkle ham over bread & sprinkle cheese over ham.
5. Pour egg mixture over all.
6. Cover pan & refrigerate overnight.
7. The next morning, take pan out of frig an hour before baking.
8. Combine 1/2 c. melted margarine & crushed cornflakes. Sprinkle over egg dish.
8. Bake at 350 degrees for 45-50 minutes. Watch to be sure cornflakes don't brown too quickly. May want to cover with foil for first 20 minutes or so.

Easy and VERY yummy!

Do you think this would be good with cooked bacon also??? If so, I am purchasing the items for this tomorrow on my final shopping day!!!
