My daughter will turn 5 on my next cruise. Can I book an excursion with the age limit 5 and up after she turns 5? Or do they use her age she is when we boarded for the entire cruise?

Yes, you can book an excursion for after she turns 5.

I can confirm that the shoreside concierge team was willing and able to book 8+ excursions for our son, who will turn 8 during our next cruise. We only tried to do this with excursions after his birthday, so not sure if they would do the same for excursions before the birthday itself.

No, Like anything age-specified (well, other than occasional fuzzy math with moving up in the kids' clubs), the limit is firm. If the excursion falls prior to a birthday, no dice. On or after the birthday, no problem.
