Boneless chicken breasts......

.......... what would you do with them? I have potatoes, rice, stuffing- all kinds of condensed soups- shake n bake- I just feel like doing something "different". :hippie:
 
God, I hate them. They are so boring!!!!

Unless you can marinate them for a few hours, I'd probably Shake N Bake them. That does add flavor.

I've tried marinating in Italian Dressing, but I think that's boring.

I have baked them with BBQ sauch, cheese, and bacon on top and that's not too bad.
 
Soy sauce, minced garlic and ground pepper for the chicken. Dice the chicken and cook quickly with the sauce.
You can top with sesame seeds and green onions if you have them but it is good without too.
white rice to accompany and I like to also serve it with string beans

Sometimes I wrap them in bacon and bake. DS loves it when I do that.

put them in a crockpot with a small bottle of bbq sauce. Cook on low for a couple of hours, shred it, and put it on sandwiches. DH adds cole slaw to his and swears it's excellent.
 
I marinate in olive oil, lemon juice and black pepper for about an hour and bake on a broiler pan for 40 min. We're trying to find new ways to go low-sodium. Kids & hubby enjoyed them that way. I knew they weren't lying when they didn't cover them in bbq.
 
I usually flatten, marinate and grill mine and then cut it up on top of a ceasar salad. OR I make chicken parm which is pretty easy. My DH likes my monterrey chicken- I usually marinate it for a few hours first and then grill them. Then I top with 1tbsp. BBQ sauce, 1/4 cup diced tomato (canned) some colby jack cheese and real bacon bits, pop em in the oven for 5 minutes to melt the cheese, yum! I also use boneless chicken breasts for chicken tacos, I cut them up in to small pieces and cook them in a skillet, add in the taco seasoning (chipotle or reg) and water and then eat it in tortillas with toppings like regular tacos. There was a thread not too long ago about many uses for boneless skinless chicken breasts.

Like a memphis pit bbq, except they usually aren't with sweet bbq sauce.
 
For something different, I cut ours in cubes and wrap them in bacon (use a toothpick to hold it together).

Make a mixture of 2/3c brown sugar, 2tbls Chili Powder.

Coat the cubes with the mixture and bake on a cookie sheet for 30 minutes.


DH loooooves these things. I made them with maple-flavored bacon once and they were REALLY good.
 
This is really good: Chicken Divan
you can leave out the mayo, sour cream, curry powder and wine if you want/or don't have them....it still tastes good. You also can boil and cube the chicken if you want....sometimes I line the bottom of the baking dish with buttered toast and lay the whole cutlet on it, put broccoli spears over that and pour on the sauce.


2 (10-ounce) packages frozen broccoli, chopped
6 cups shredded chicken, cooked
2 (10 3/4-ounce) cans condensed cream of mushroom soup
1 cup mayonnaise
1 cup sour cream
1 cup grated sharp Cheddar
1 tablespoon fresh lemon juice
1 teaspoon curry powder
Salt and pepper
1/2 cup dry white wine
1/2 cup freshly grated Parmesan
1/2 cup soft bread crumbs
2 tablespoons butter, melted
Directions
Preheat oven to 350 degrees F.

Remove the outer wrappers from the boxes of broccoli. Open 1 end of each box. Microwave on full power for 2 minutes, until thawed. Drain the broccoli and put into a casserole dish. Add the shredded chicken.

In a medium bowl, combine the soup, mayonnaise, sour cream, Cheddar, lemon juice, curry powder, salt and pepper, to taste, and wine. Whisk together to make a sauce. Pour the sauce over the broccoli and chicken. Mix well with a spatula.

Place the mixture into an 11 by 7-inch casserole dish or 2 (9-inch) square disposable aluminum foil pans that have been sprayed with vegetable oil cooking spray. Pat down evenly and smooth with a spatula. Combine the Parmesan, bread crumbs and butter and sprinkle over the top.

Bake for about 30 to 45 minutes.

top with Cheddar or Gruyere cheese.
 
You can do so much with chicken breasts. I cannot believe anyone can find them boring.

Thin slices with veggies and you can make stir fry or a big assortment of asian inspired dishes.

Butterfly slice them and stuff with whatever fancies your tastes.

Shred with a BBQ sauce for sandwiches.

Coat with breadcrumbs and parmesean for chicken parm.

Dice up and make quesadillas.

Create a creamy sauce with chunks add in some doughy dumplings for a comforting meal.

Get some noodles and make chicken alfredo.

Chicken and rice casseroles are wonderful too.

That's just off the top of my head. I love chicken and all the things you can make with it.
 
Orzo with Chicken and Cheese

3 cups chicken broth
1 cup uncooked orzo
2 chicken breasts, cubed
1 can diced tomatoes (one of the flavored kind would be great)
2/3 cup milk, cream, or half & half
1 cup grated parmesan cheese, plus more for garnish
Salt & pepper
Italian seasonings
Red pepper flakes

Put broth in a stock pot; bring to a boil. Add pasta; bring to a boil and simmer 10 minutes, stirring occasionally.
Season chicken with salt and pepper and Italian seasonings. Cook in a large non-stick skillet with EVOO over medium high heat until golden and cooked through. Stir in the tomatoes and scrape up all the bits on bottom. Let cook a couple of minutes then add the cream and turn down the heat. Stir in the cheese a little at a time until melted and all is incorporated. Then add some more salt and pepper and italian seasonings, and a pinch of red pepper flakes.
Remove pasta from heat, reserve 1 cup of cooking liquid and drain the rest. Add the orzo to the chicken pan. Add in cooking liquid as needed to maintain a creamy consistency. Top each serving with more cheese. Serve with Crusty bread. Makes 4 servings.

eta: could use any pasta here - a smaller kind preferably
 
we are having a chicken and bacon pizza tonight.
 
I'm making Chicken Milanese tonight. Its easy and so tasty. I fry up the cutlets thin in breadcrumbs and parmesan cheese.

In a salad bowl I add baby spinach, red onion, lettuces, fresh tomatoes, olives, roasted red pepper, chunks of parmesan reggiano, carrot slices and pepperoncini peppers. Toss with some olive oil and balsamic vinegar and top the cutlet with the salad. Delicious!

i was going to suggest something similar. Slice the chicken so that it can carmelize on the most surface area.
 
I take a whole bag of them, par boil them, cut into chunks and make chicken pot pies from scratch. I freeze the filling in bags & assemble with crust when ready to bake one.

A lot of work which is why I make many at a time to freeze.

Do the same, but use a jar of salsa instead of bbq sauce. Shred & serve over noodles.
 
My new favorite is Salsa Chicken. I browned 2 chicken breasts in a frying pan and then poured salsa over it and baked it for about 15 to 20 minutes, added some shredded cheese, put it back in the oven for 3 minutes and served with cheesy mexican rice (Old El Paso mix). It was the best chicken I have ever had and the chicken was so juicy.

DH's favorite is when I marinate Chicken in Italian dressing, then dip it in bread crumbs (usually panko) and bake, serve with pasta salad.
