Boneless chicken breasts......

I just put 4 frozen ones in the crock this AM along with 2 cans of white kidney beans, 2 cans of chopped green chilies, S&P to taste, a spoonful of cumin and 2 cans of chicken broth......white chicken chili this evening :goodvibes

--12 boneless, skinless chicken thighs, or 6 boneless, skinless breast halves
--1 cup brown sugar
--1/4 cup lemon-lime soda
--2/3 cup vinegar
--3 cloves smashed and chopped garlic
--2 T soy sauce
--1 tsp ground black pepper

The Directions.

Use a 4 quart crockpot for this recipe.

Plop the chicken into your crockpot. Cover with the brown sugar, pepper, chopped garlic, and soy sauce. Add the vinegar, and pour in the soda. It will bubble!

Cover and cook on low for 6-9 hours, or on high for 4-5. The chicken is done when it is cooked through and has reached desired consistency. The longer you cook it, the more tender it will be.

Serve over a bowl of white rice with a ladle full of the broth.



We LOVE this! The only thing I do different is to pour the sauce into a sauce pan and thicken it with a slurry of 1/2 c water and 2-3 TBS of corn starch.
 
A stick of butter..... 6 oz cream cheese and HEALTHY REQUEST CREAM OF CHICKEN SOUP........ :laughing:

It's like going to McDonalds and getting a big mac and lg fry with a diet coke....

Exactly! I was laughing when I typed Healthy Request. I've tried using low fat and non fat but it doesn't work well with this recipe.
 
Chicken roll-ups

line a cake pan with dried beef (pinched up some)
put boneless skinless chicken breasts (wrapped in a slice of bacon) on top of dried beef
in separate bowl, mix 2 cans cream of mushroom soup and 2 pints sour cream
pour mixture over chicken
bake at 300 for 3 hours (uncovered)

serve with mashed potatoes or over egg noodles!!!
after baking for so long the chicken is sooooo tender. it just falls apart.
 

here's another favorite of ours......
i usually cut the chicken breasts, at least in half, first since they are huge!
saute/brown in large skillet with a little olive oil and butter. i season it with garlic salt, adobo and pepper. add onion slices and canned diced tomatoes. i usually put some fresh diced (really small) jalapeno peppers too. when everything is really tender and almost ready to serve, i add fresh chopped cilantro.
i usually serve with yellow rice, beans, and a salad or some other veg.

Forgive me if this has been mentioned but I have not read through the postings.

I would put the chicken in a cassarole dish and pour over it some cream of mushroom soup. I usually use one large can of fat free mushroom soup, 2 small garlic mushroom soups and 1 1/2 can of milk. Mix the soup and milk in a bowl and pour over the chicken. Bake at 375 for 45 minutes.

I serve this with rice and a veggie
 
Lots of great ideas here. I, too, find chicken breast boring. I have a couple different things that I do that we love.

Chicken ala king over rice (I make a cream sauce with a bit of sherry and sauteed onions and peas)

Chicken stir fry

chicken with apricot sauce (1 jar polaner apricot, 1 bottle red catalina dressing and 1 packet of onion soup mix...YUM!)

And my new favorite...chicken with broccoli over pasta. Sprinkle adobo on the chicken and saute. Then saute garlic in a bit of olive oil, add a 32 can of chicken broth, add crushed red pepper, cook broccoli in the broth. Then add cut up chicken, grated cheese and lots of butter! Serve over pasta (I like rotini).
 
I love Indian food, so I usually grill the chicken breasts until semi-cooked through. Then cut it into small pieces and simmer them in Indian cooking sauces for about 20-30 minutes. I get jars of tikka masala or korma sauces from the ethnic food section of the supermarket. Serve it with rice or naan bread and it's awesome!
 
I haven't read the four pages of responses, but my "go to" recipe for chicken, when I can't come up with anything else, is Chicken Stroganoff. It's a weight watchers recipe, and it's a crock-pot recipe

8 oz. fat free sour cream

Mix soups and sour cream together. Pour over frozen chicken in crockpot. Cook on low for 6-8 hours. Serve on rice or egg noodles.

Yup, frozen solid, right from the freezer! I was skeptical the first time I made it, but it was perfectly cooked! I always break the chicken apart into chunks when it's completely cooked, instead of leaving them whole.
 
We coat chicken breasts with taco seasoning and saute until done. We cut the breasts into strips and serve rolled up in flour tortillas with cheese, onions (if you want) and a bit of salsa.

Another favorite is I take grape tomatoes, sliced zucchini, and sliced eggplant and roast those in the oven on a sheet pan with a little olive oil, salt, pepper, and fresh garlic gloves. I then thinly slice the chicken and season with a little salt and pepper and stirfy in a little olive oil. Then I had in the veggies, a pat of butter, and the juice of one lemon. I then toss it with angelhair pasta. It is so yummy and makes great leftovers.
 
Not low-cal, but a once in a while winter comfort:

Pat dry the chicken breasts, place in sprayed with oil casserole dish.
Top chicken with 8 oz. of shredded Swiss Cheese
Top Swiss Cheese with one can of Healthy Request Condensed Cream of Chicken Soup

Then: Take a box of Corn Bread Stove Top Stuffing...Do NOT cook it according to package directions. Instead, melt 3/4 stick of butter in a sautee pan and then add the stuffing off heat. Stir well and then top the casserole with the stuffing.
Cover with foil and bake at 325 for 1 hour.
Serve with a vegetable and it is a complete meal.
 
Not low cal or esp healthy but easy....pan fry the chicken in butter and a little bit of salt and pepper, place on white rice, and spoon on some tostitos nacho cheese dip...tasty.
 
OMG, I love chicken breasts. What other meat is so versatile that you can cook just about any ethnicity of food with it? I have a lot of great idea's from here and can't wait to cook them. I will have to get some of my recipes and put them on here.
