PLANTAINS AND PEANUTS
(CRUNCHY NDIZI)

Ingredients:
5 each Ripe Plantains
1 cup Sugar
½ cup Water
1 cup Peanuts, chopped
Method:
Peel and slice plantains into 1-inch pieces, cut at a diagonal. Caramelize the sugar and water into a light brown syrup. Sauté the plantains in the sugar/water syrup until soft and golden brown in color. Toss in chopped peanuts. Serve warm.
