Let me get this straight you can get a room key and bill everything to your room while you are at the parks? I have never been to Disney and that sounds like a pretty easy way not to carry a bunch of cash or credit cards around.
 
Yes, you can charge to your room and pay your bill when you check out. Between charging to the room and sending your purchases to your room, nothing beats staying on grounds.

You can charge *almost* all purchases to your room. This includes restaurants, even fast food restaurants. What's not included is purchases from carts that aren't connected to the central computer. The carts that fit this category mainly just sell snacks and drinks. You also can't charge purchases from the Swan and Dolphin if you go there.
 

This is one of my favorite on site features. I leave my CC# at the deak when I check in.

On the day I'm leaving an itemize bill in put on my door. If there are no discrepancies I leave no need to check out.
 
In addition to all the above comments, you can ask the front desk to print you out your bill at any tiime. I sometimes ask just to check with my "record." Enjoy staying on WDW property!
