I’m thinking about a May trip and considering using a ton of points to book a one bedroom at the Polynesian tower and having most meals in the villa except 1-2 character meals or booking a Polynesian (regular- not tower) studio and buying the dining plan. Our kids will be 5.5, 3, and 7 months. The overall cost is almost the same because I could sell the extra points it would take to get a one bedroom to instead buy a dining plan or go towards dining out. The extra space in a 1 bedroom with a baby would be nice but the studio does have that 2nd bathroom space for a pack n play for quiet naps etc. and seems doable too. Which would you choose?

Other thoughts are a 1 bedroom cabin at Fort Wilderness would be similar points to a Poly studio with the kitchen and extra space but we would need a golf cart and loading a golf cart with a double stroller and 5 passengers isn't easy to deal with. We stay at AKL often already because my parents own DVC there and not really interested in other cheaper 1 bedrooms like Saratoga/ OKW. Could consider 1 bedrooms at Beach Club, Wilderness Lodge, or even Vero Beach that are a little less points.

Based on the options you presented, I'd book the regular Poly studio and pay for dining. We never get a dining plan because it doesn't work with our eating patterns. Sometimes we cancel a meal, order apps instead of meals or order a kids meal for an adult, etc.

The Poly studio isn't huge, but the bathrooms in the "old" Poly studio is a good setup for little kids. If you are eating out because you saved money on the room, then the size of the room isn't as important because you'll spend less time there.

I'd be sure to request a longhouse that has balconies so you have someplace to escape if the kids are asleep/napping, etc. You can sit outside on a patio/balcony and have a conversation/decompress without bothering them.
