If the dinner show is at 4:45, what would be a good time for an ADR to be seated by the time the show starts?

I would try for 4:15. It will take a few minutes to be seated and get your food, so you should be eating when the show starts.

I actually would advise a little less time than that. We've never really had to wait to be seated there and the servers are usually very quick to get your drink orders. Then it's up to the buffet and back for the show. I'd say maybe 20 minutes before the show time.
