Best Counter-Service Vegetarian options in parks?

During our June trip, we did several sit down restaurants and they all had a couple vegetarian options, but the few counter service places we wondered by didn't seem to vegetarian friendly besides cheese pizza. The Leaky Cauldron didn't have anything at all so I ordered a Butterbeer and watched my DH eat lol (he eats meat).

Does anyone have any suggestions for the best vegetarian options for a quick meal or snack? The baked potatoes (Jacket Potatoes) from the London Taxi cart had a couple good options.

In November we want to do less sit down meals so I'd like to see what the best options are.

Thanks! We were disappointed with the the lack of vegetarian options in the leaky cauldron and three broomsticks! We ended up getting meh food elsewhere in the park but happy to see if there are other options!
 
I’m not vegetarian but not much of a meat eater either. Lisa’s Tea House of Horror in Springfield has a decent selection of premade salads and things that are okay. I’m excited to try Today Cafe.

It’s TS but Mythos has a nice selection of veggie dishes and isn’t a whole lot more expensive than CS especially given the upgrade in quality and overall experience. The Pad Thai was disappointing but the Greek salad and risotto are nice.
 
The plant-based bolognese at Cafe Four (in Marvel Super Hero Island) and Louie's (in the New York area) is really good, though a tad spicy. It has a veggie protein, with vegan cheese on top and a breadstick on the side. At the Three Broomsticks, we were able to order customized platters with our choice of vegetables. The roasted potatoes were great. IIRC, we did a similar thing at the Leaky Cauldron, but we may have just ordered sides a la carte. (Now I wish I had taken photos of those meals!) Richter Burger and Mel's Drive-In both had really good veggie burgers with vegan cheese and toppings. There's also the Captain America diner in Marvel Super Hero Island, but I didn't try their veggie burger because folks online reported it wasn't cooked as well as at the other quick service places. Didn't make it in to try the vegan croissant at the Today Cafe, but I noticed it was also available in the bakery cases at Croissant Moon in IOA and the bakery by Lombard's in Universal.

If you end up wanting to try table service, Mythos was very accommodating and helpful - they made us a great vegan pasta, and a decent pizza (with dairy cheese, but I bet you could modify it if you were OK without any cheese type topping). There was also a good vegan pasta at Vivo in Citywalk, but it was a little too spicy for us. It did have some nice vegan sausage in the sauce - always nice to have a hearty protein in a dish!
