Beef roast I need new way to cook it.

I made a roast yesterday. Threw onions, potatoes, carrots into the crockpot topped with the roast. Seasoned with salt, pepper & garlic. Added about a cup of beef stock & cooked on low for about 6 hours. Used a little corn starch to thicken up the "gravy" at the end. It was excellent.

I prefer the golden mushroom soup too. I use it and French Onion. Just season the roast with salt and pepper, brown on all sides. Put it in the crock pot and add the soups. Really good.

The 3 envelope recipe someone mentioned upthread is really good too.
 
I also used a can of beef broth as mentioned by pp. I skipped the step of searing the meat though and it came out fine in the crockpot.
 

In a Slow Cooker


I like to start at HIGH about 4-6 hrs and then switch to SLOW
I've always shredded- you can eat as is or make sandwiches

add:


I C Ketchup
1 Onion chopped
juice of half a Lemon
a drop of Liquid Smoke
1 tsp Vinegar
2 T Brown sugar

salt /pepper
 
I throw mine in the crock pot with some water and a bunch of beef bouillon cubes.
 
So what kind of roasts are people using? I usually do a chuck roast with sliced onions, whole garlic, red wine and thyme. Sear it on all sides and then toss it in a crock pot with everything else.

First, I pound the crap out of it with a hammer.

You could do the Pepsi/Coke recipe without the cream of mushroom.

Easy.

I packet of onion soup mix
I can of Pepsi/Coke

Slow cooker. But never for as long as they say.


Add some onions, carrots and potatoes.

I thought there's no way I would ever use pop in a recipe. I hardly ever drink it.

But the roast turns out wonderfully. And I don't even love pot roast. ;)

an I HATE brown gravy in all shapes an forms.

Never liked the golden mushroom soups

NO tomatoes not even ketchup

YES I'm picky about what I eat.
 
these all sound great, but can someone take a step back and give me very, very, very explicit instructions. I've tried to make a roast in a crockpot twice, and both times it was dry and gross.

SO... talk to me like I'm a 5 year old... :teacher:
what type of roast do you buy?
Litterally what order do you put things into the pot?

I'm also confused because I've had other friends tell me that the whole roast should be covered with liquid, but clearly one can of soda or 1/2c of water isn't going to do that.

Please help! :flower3:
 
I put 6 potatoes that are quartered in the bottom of the crockpot. First I season the potatoes with a mixture of a teaspoon of each paprika garlic powder salt and 1/2 tsp pepper. Then I seasoned a 2-1/2 pound chuck roast with the same seasonings. Put the roast on top if the potatoes. Cut up one pound of carrots and put on top of roast then pour one can of beef broth 14 oz.. Cook on high 5 hours . Meat was very tender and veggies were cooked perfectly. Hope that helps

my liquid of choice while cooking beef is red wine :thumbsup2

LOL I have done this as well but we rarely drink red wine, we usualy drink white so I don't always have red wine to use when cooking. :) But it was very very good! :)

Literally, a 2 lb roast, usually cross rib but honestly I've used all kinds of roast and never had a dry one. :) I put it in the crock pot first, add one packet of onion soup mix, add 1 can of beer or 1/2-1 cup of beef stock, add onions, potatoes and carrots and cook on high for 4 hours or on low for 8. I don't worry about covering the roast with liquid because as the meat cooks the liquid in the pot "grows". lol The meat juices provide more liquid as it cooks. lol Good luck!

I never use things like cans of soup or envelopes of dry mix. I use beef broth or red wine.

My opinion is that soup is soup and why should I buy a can (that is 1.65! even for the store brand!) when I can make beef broth super easy.

I was about to post that I use beef broth and red wine as my liquids with a splash of soy sauce. I do sear the roast on all sides in olive oil and then deglaze the pan with red wine before adding beef broth. I put a quartered onion and some garlic cloves in and cook them up while searing. I'm left with a nice rich au jus for sandwiches. Last time I also thickened some of my au jus with flour to make gravy and made very unauthentic but delicious poutine to go with the sandwiches.

I'm not the person who suggested Mexican pot roast, but here is how I make shredded beef for tacos etc using a beef roast. I combine about 1/3 c apple cider vinegar, a couple of chipotles with their sauce, a few cloves minced garlic, and some cumin, oregano, salt and pepper. Sorry, I don't measure, but I use them in that order, as in, a few shakes of cumin, less oregano and then like a pinch of salt and a pinch of pepper. If you haven't already chopped or processed the chipotles, then blend all these items to a puree in your food processor. Pour the sauce over your seared roast and add water or any broth. I tend to use a combo of chicken broth and water for this. Cook as usual, until it falls apart and can be shredded.

I buy a chuck roast. Cheaper, tasty.

If I am doing the 3 envelope recipe-I do not sear it. Just put the roast in the crock, put the Italian, Ranch and Brown gravy mixes on top (any order) add a cup of water. I cook it on low for 8-10 hours.

The soup roast--I salt and pepper both sides and then sear the roast in a little oil. I don't use olive oil, can't get it hot enough. Put the roast in the crock, put the golden mushroom soup on top and the can of French onion (I don't use a mix, just a can of each). Let it cook for 8-10 hours. There is enough liquid in the onion soup so that you don't have to add any liquid.

If I am doing it the old-fashioned "mom's way"--I salt and pepper the roast then sear the roast in oil in a large pot or dutch oven, remove the roast and add 1-2 chopped onions (I cut them in large pieces), 1 stalk of celery (chopped really small) and a minced clove of garlic to the pot. Let those get tender and remove. I like to add baby carrots at this point and let them caramelize a bit and then remove. Add a tablespoon of flour to the remaining oil and cook and stir to lightly brown. Then fill the pot about 1/3 of the way with 1/2 water and 1/2 beef broth. Add the roast and the carrots and onions back in. I don't time things well but after the roast has cooked a little while, I add quartered potatoes.

The last method is the way my mom always cooked roast and I love it, but its time consuming so unless its for Saturday or Sunday supper, its usually one of the quicker "throw it all in the crock pot" methods.
 
Has anyone else doen the can of beer thing? This is the first I've read of that and I'm curious to know how it comes out.
 
I do not cover it with liquid because it comes out as "boiled meat to me".

The juices from the meat, mushrooms, and onion provide enough moisture for me.

Now I do use a chuck roast that does have plenty of liquid/fat. If I were using a leaner cut I would probably add more veggies that provide liquid & maybe some beef broth.
 
Any ideas for a roast recipe that does NOT use onions? My kids hate the way the house smells after I do the pot roast with onion. I've used both the onion soup recipe and real onions and while it tastes yummy the house smells like onions forever! I'd like to do a roast with a brown gravy but no onions. Any ideas?
