Beef roast I need new way to cook it.

Any ideas for a roast recipe that does NOT use onions? My kids hate the way the house smells after I do the pot roast with onion. I've used both the onion soup recipe and real onions and while it tastes yummy the house smells like onions forever! I'd like to do a roast with a brown gravy but no onions. Any ideas?

You could just season the meat, sear it, deglaze with wine or beef broth and cook it from that point as usual. I don't like the way pot roast turns out in the crock pot so I only know this works in a low and slow bake. I use both onions and garlic, but you don't have to; my MIL never did.
 
OMG, I could just never, EVER, make a nice beef roast with anything that basically amounts to a packet or can of nasty toxic chemicals.

It is the quality of the beef roast that means the most to me... I can't even imagine wanting 'ranch' beef roast.

And, to the last poster, about the onions...
First, like the quality of the beef roast...

The onions that you are using might make the huge difference.

Many onions are very 'musky' and 'hot'.
OMG - I don't like that either.

I buy Peru onions, or Vidalia, or some organic onions that I tried and are my favorite. You don't have to use too much onion either. And, it might help to saute them until they just barely begin to brown/caramelize before putting them in with the roast.

for carrots, I do not like the instant 'baby' carrots... They are not ripe, and aged, enough. They are not sweet... they taste green, and just don't have that good flavor. I buy the large sack of carrots and keep them in the bottom of my bin in the fridge... The longer it takes to use them, the more orange and better tasting they get!

We prefer mashed potatoes, with the beef gravy, over potatoes cooked in with the roast.
 
I'm probably the only person that buys roasts for everything but serving it traditional roast style.

Today I have a small roast in the crockpot to make barbacoa which is spicy shredded beef. I will serve in small corn tortillas with brown lime cilantro rice and spicy mixed veggies.

I also use roast cooked in the crockpot with teeny amount of cherry coke and onions/garlic. Cook it up then shred and mix with bbq sauce.

I make Italian beef sandwiches with a roast as well.
 
Its interesting that others don't find baby carrots "sweet". I buy the tiny little "petites"--and you can get organic if its important to you, and they are super sweet. Once caramelized they are soooo good and add a great sweetness to roast and/or stew. I rarely buy the large carrots anymore. Only use them to shred for slaw.


As for the onions, one of the reasons I cut mine so big is so that dd can pick them out. She doesn't like onions. As for the smell, I use Vidalia onions and there doesn't seem to be too much of an oniony smell.

And just to be clear, if anyone wants to try it, the roast with the dry ranch dressing doesn't taste like ranch nor does it taste like Italian dressing. Its just a good mixture of seasonings. There are some recipes online for homemade mixes for ranch and Italian, if there is something in the mix that you would rather not have.
 

I have a cola roast recipe which I love! PM me if you would like it. I am nowhere near my recipe book so I can not post it right now.

I make a coca cola roast in the crock pot. Sprinkle with salt and pepper and sear all sides in a dutch oven. Move roast to crock pot and pour one envelope of the Lipton Onion Soup Mix over it then pour 2 cans of Coke over it. (Must be regular Coke...do not use diet) Let it cook all day and it will be just falling apart. I will take the leftover juices and reduce and thicken to a nice gravy or leave thinner and do french dip type sandwiches with it. The gravy has that savory thing going on due to the sweeness of the coke and the salt of the soup mix & beef juices.

And yes, the Lipton Onion Soup is admittedly not great for you, nor is the Coke but I will eat very healthy sometimes and other times I like to tear it up and live on the edge. Some yin with my yang... :)
 
All the recipe ideas sound good. But I am not such a fan of boiled meat.

I like to roast it in the oven in a tall baking sheet. Cubed, spices to taste, and favorite veggies. cover in the flavored liquid, as it cooks down the top of the beef and veggies will brown. Time the temp so some gravy is left by the time the meat is tender.

We've never used cream of soup or soup mixes for our pot roasts either.

I "loosely" follow the recipe in an old Better Homes & Gardens recipe book.

I lightly salt & pepper the roast & then sear it in a frying pan w/ some olive oil.

In the crock pot, I first put in cubed new potatoes (scrubbed but not peeled), onion (normally a Vidalia onion), & some carrots. (Regarding carrots, if I have time, I'll slice whole carrots; if I'm in a hurry, I'll just use the baby carrots.)

After the vegetables are in the crock pot, I then place the roast on top.

I then mix together about a cup of beef stock, 1/4 cup or so of water, a tablespoon of Worcestershire sauce, a dash of soy sauce, & a little garlic. You could use red wine w/ or instead of the beef stock, but red wine gives me migraines unfortunately.

I pour the mixture over the roast & let it cook on low if I have time or high if I haven't gotten it in the crock pot soon enough. The longer it cooks, the more tender it gets.

I think putting the vegetables in the bottom of the crock pot & not using too much liquid keeps the roast from becoming "boiled meat."

I just made this one yesterday, from Pinterest. It was super moist, tender and full of very good flavor. Took about 5 minutes to prepare and cooked all day in the crockpot. A definite keeper. I usually make my roasts in the oven but this one was much better.

Slow Cooker Balsamic Pot Roast ~
4–5 Lbs Beef Chuck Roast
• 2C Beef Broth
• ½C Light Brown Sugar
• ¼C Balsamic Vinegar
• 1T Soy Sauce
• 1t Salt
• ¼t Red Pepper Flakes
• 3 Garlic Cloves, minced
• Zest of ½ Orange
• Red Potatoes

Throw it all in a crockpot and cook all day.
