I understand your frustration completely. I took about a 10yr break from WDW (poor college student, grad student, and then young married family with LOTS of student loans to pay off....no money for pretty much ANYTHING!!). When I stopped going in the mid-eighties, dinner reservations at EPCOT were made via tv screen just underneath SSE. All ressies had to be made the day of. When I planned my first trip back in 2000, I ran to "talk to the people on the tv"....well, I guess you can realize MY surprise when everything was GONE!! Not only that, but we were there over July 4th weekend....hmmm....we didn't get ressies ANYWHERE!
The best I can say about this....you never make that same mistake twice. For you, that might mean making ressies that you will then cancel if your weeks change....but, planning is so important.
Unfortunately for you, the dining plan has certainly made getting ressies harder. It is working for WDW...people are eating on property more, but flexibility is suffering.
I would suggest that you memorize the dining number, and start calling daily about 1 week out. Keep calling during your trip, and I bet you will get some ADRs.
