You CAN videotape (no video LIGHTS) and NON-flash photograph nearly all shows and parades.

Notable exceptions (no video or photographs) are Soarin', American Advernture, Hall of Presidents, Stitch's Great Escape, and Ellen's Energy Adventure.
Also, not a good idea on Dinosaur, RnR, or Space Mountain.
Too dark, fast, and it might be forbidden.
Sometimes CM's will be more... or less... tolerant on various attractions.
Rule of thumb: If the CM or the recorded spiel or signs say "No," then don't.
Otherwise, its OK.
Never use flash INSIDE an attraction.
Its OK to use flash and record video (no video lights) during the Spectromagic parade, both Stunt shows, B&B Live, FotLK, IllumiNations, Wishes, and Fantasmic! (although flash won't do any GOOD at a long distance, anyway).
