Anyone in here decorate cakes?

Hey guys! I need some help on making a cake. DD's 1st birthday is tomorrow and I want to make her a cake to smash and eat. But I don't want her to have a sugary frosting that may make her sick. Any ideas on either a sugar-substitute frosting, or maybe one made naturally with applesauce, etc? I have to be able to tint it black and it's going to cover this cake. If I can make it work!

Awww, thanks Stargrazer! Well I have a class Monday, I skip a week and then my last class will be on the 28th. I am going to the Bahamas!! I was the only one in class so my instructor said we could start a week early. But I still need to make a cake and put it in the freezer for the following Monday. Then I need to get up early and put fondant on. And I still need to finish my fondant roses (I DO NOT like the large fondant roses, they are ugly, I like the medium ones).

And I learn the lily and the other ones you use those deep flower things for this Monday.

May is Fondant and Gumpaste, did you all like that class? It looks a little intimidating.

I'm quoting myself...I think I was jazzed on caffeine this morning, lol!

I don't have any recipes off the top of my head, but i'm sure they are out there! Just beware...if you are coloring icing black, it will make a mess when she eats it! I did a penguin cake last year and colored the icing black for a 1 year old's smash cake...whooo boy was that poor baby covered in black icing! I might suggest starting out with a chocolate icing so that you don't have to use quite as much black coloring...

Have you been over to Cake Central? There are TONS of recipes over there for all kinds of things! You might take a peek over there at the recipe section!

Make sure that you post a picture of your finished cake! (your DD is absolutely adorable, by the way!)

Oh wow, good point about the icing. A light color would look cutest on her face. Maybe I'll do a pink Mickey instead! That would be so cute!

You are most welcome!! I had another thought...I did a birthday cake for another 1 year old and the mom wanted everything in pink. The cake itself was a vanilla cake filled with a strawberry shortcake like filling and the I iced it in strawberry cool whip. You would have to keep it refrigerated, but there's another idea for you...

There is a product out there that I buy at Gordon's Food Service. It's the same non-dairy whipped icing that the grocery stores use on their cakes labeled non-dairy whipped topping. It's called Rich's Bettercreme. It's still going to be sugary, but maybe not as bad as what a traditional buttercream might be. If you have a GFS near you, you might check it out. It's in the freezer section and it comes in a pink quart container - like the cardboard milk containers. It's about the consistency of partially melted ice cream until you whip it up. I pour some of it into my kitchen aid bowl and whip it for about 10 minutes and it's done! I use it all the time...
 
Disneynut, I started that class but didn't finish it :headache: ; that's why I never posted pics from that class. But I did end up getting a decorating job as my excuse! :rolleyes1 ;) I do want to go back and finish it up tho. We also have a fab decorator here that does private lessons, one of these days I'm going to do it.

So, I was inspired by last weeks cupcake week with Martha Stewart. Bakerilla did these, but used cake and cream cheese buttercream. I tried the cake version, but it was so moist that it wouldn't mold into the form. So I thought I would try the cookies & cream truffles.

I thought I purchased pink candy melts and I purchased white, so I had to add color and then I had to add a bit of shortening. Then it became too thin.

Oh well, they still taste good!

Top is strawberry w/cream cheese, middle is carrot w/cream cheese and bottom is white with standard buttercream.

Hope you like it; the bride's mom had tears in her eyes when she first saw it. I was so happy!

OhmyGOSH that is IT! Pretty much, my shape is round and the top is three tier single layers but yep...it's the same. NICE JOB! If mine comes out HALF that well I will be thrilled.

Any advice? Seeing how you've done it already...

Stargazer, I think the hardest part is the setup. This cake weighed in at around 175lbs. Just make sure you use lots of support and you will do fine.
 
I did the morning glory, petunia, lily and another flower (can't remember the name) yesterday, the only one that I had trouble with was the petunia, lol. I love the morning glory:) I'd take a pic, but I can't find my camera:(
