I am planning on getting a gift card for my husband and myself as well as for our boys for our next trip to use for extras that are not included in the DP or gifts we want to buy. I hope to keep our spending on budget. I was wondering if everywhere on Disney property will except the gift cards, and if we can use it to purchase drinks at the pool, or wine in the hotel, or if alcohol purchases aren't allowed with a gift card. Anyone? Thanks!

Since you are staying on property you can charge things to your KTTW card and use the gift cards to pay your room bill. That is what I would do. Less to carry around and leave the GCs locked in the safe.
You can use the GCs at most locations. The places you can not are the non-Disney owned stores and restaurants and the few remaining food kiosks that are still cash only.
There is no rule saying they can not be used for alcohol.

I saved up Disney gift cards for almost a year. My kids school has a giftcard program as a fundraiser. I bought gift cards over the year and used them to pay for all my meals this last trip in May. Alcohol, food, and even in the shops. I found it a great way to slowly save without impacting my weekly budget. Worked great for me!

My 8 year old carries her GC in her lanyard and uses it for the special things she wants to buy as her KTTW has no charging privileges. It keeps her on budget and to spend wisely also makes her feel a little independence. Most places on Disney property takes them with no restrictions however there are a few indenpent places that don't. You should be fine.
