I buy them fresh when they go on sale and then I flash freeze them before putting them in individual bags so that I can pull out, one, two or four as needed and I know the quality. I freeze them on wax paper on a cookie sheet after trimming them. I wait about 2-3 hours and then I simply put them into the baggies and label a large freezer bag that the baggies go into. I do this every 4-6 weeks and it saves money, time and makes it really easy for DH or I to make quick meals. I buy most of my meats in bulk and freeze individual servings. It works for us.
