Any good/easy recipes for left over pulled pork?

We had pulled pork for dinner last night. As one of my DD's doesn't like BBQ sauce, it was done plain in the crock pot & we added our own flavoring when we made our sandwiches.

I have quite a bit left over & we probably won't use it for more sandwiches, but there is more than enough to make it into another meal.

Does anyone have any ideas or good recipes so I don't have to waste it?

My DH makes quite a bit of pulled pork when he makes it (he usually smokes two pork picnics - about 8 lbs each at a time.) It freezes really well - we usually drench it in BBQ sauce and freeze it in qt size freezer ziploc bags - but I'm sure you could just use beef broth instead of BBQ sauce to freeze it. (You want to have it in liquid when you freeze it, it won't get freezer-burnt then.) When you defrost, just drain the liquid.

We almost always have some in the freezer! Just warm it up and serve on some fresh rolls and you'll have a quick dinner. :)
 
I would freeze it. I have never froze cooked pork before but freeze cooked chicken all the time. It comes in handy when I need cooked chicken (I usually cube it up) for a casserole all I have to do is defrost it.
 

1. Reheat in a pot with a packet of taco seasoning...dump into a casserole dish, top with shredded cheddar or colby jack cheese and a mixed package of corn muffin mix....bake as directed for the muffin mix.

2. Reheat in a pot with a couple cans of "vegall" or a bag of mixed frozen veggies(including potatoes) and a can/jar of beef gravy. Top with mixed "Bisquick" topping....bake as directed for Bisquick bake on package.

3. Reheat in a pot with cream of mushroom soup (with the milk/water added) and maybe some sauteed diced onions and mushrooms and serve over noodles.

4. Make a quick fried rice or buy some ready made and add the leftover pork. You can also pick up a cheap chinese seasoning packet and add it to the pork with some pineapple tidbits and serve over rice and veggies.

My family likes to put chopped/pulled pork on top of a salad. We also do this if we have any left over chicken or steak.
 
Yum, good ideas. I bought 3 big boneless pork loins this week, because they were on sale for only $1.39 lb. Now I have some new ideas for cooking them. :)
 
Make baked potato skins with the pulled pork. Add the pulled pork before you put on the cheese. When you broil the potato skins, the pulled pork gets a little crsipy.
One of my favorites is to sautee a diced onion, add the plain pulled pork, then add 2 large cans of diced tomatoes (or 2 regular cans diced tomatoes and 1 can of Rotell), 2 cans of drained black beans, and 2 cans of either hominy or corn. Season the resulting stew with chili powder, garlic powder, and black pepper. Salt to taste. Just heat and eat!
