Anniversary and Birthday celebration suggestions

Hello all. I am new here but have been reading this forum for a while and love the discussions. I am celebrating my 15 year wedding anniversary this year and my husband booked a trip to Disney as a way for us to celebrate this occasion (along with my 3 kids) since he knows how much I love WDW. What is even more special this year is that both my husband and I will be turning 40 (my husband will be turning 40 a few days after we leave disney), So we are trying to find some special activities or dinners that can make this special. We have been to WDW prior to COVID and know a lot has changed and it being more stressful booking ADR and enchanted extras. We will plan a few ADR right at 60 day, but no idea what we should prioritize (ADR or enchanted extras) or what is realistic. Is it wishful thinking to get a fireworks dinner reservation or fireworks cruise for either 60+3 or 60+5?
 
I celebrated my 40th by staying YC CL and dinner at Cali Grill during the fireworks. It was fabulous. It is hard to say on whether you can book the cruise or hard to get ADR, but I would say doable!
 
I will be celebrating my 60th bday in May. We are dining at Narcoossee’s, the Boathouse, and Raglan Road. When we went for our 30th anniversary we did the highway in the Sky Dine-around which may not be back yet. Hoop de Doo review is a great celebration; that is coming back.
 
Thanks for the suggestions and giving me some hope I will be able to make the reservations. I will cross my fingers that it will all work out.
 

Have you ever done a club level stay?
Maybe do that instead of dinners or extras!
A fun splurge. Even if you did that for a split stay to save a bit. Could be fun!!!
 
For my 50th birthday last year, we had dinner at Citrico's. We ordered dessert and coffee and along with that, our terrific server brought out gorgeous chocolates on a tray (they looked like little jewels), with "Happy Birthday" written on the plate. We were pixie-dusted for sure!
 
Not sure if this is the place to post this thread, but I was wondering if I could get some ideas from the community here. We are traveling to WDW this summer with another family and the dad/husband told me that he would like to do something for their wedding anniversary at the end of the trip. They didn't get a chance to celebrate their 20th due to the pandemic and has enlisted my help in the planning. They have never been to WDW before, but are veterans at DL. Any fun ideas would be greatly appreciated - does not have to be in the parks, but he would like it on Disney property. Thanks!
 
So many options based on what they are looking for and if it is for just the two of them or for everyone. Here are some potential ideas:

Special Meal - Places like California Grill, Yachtsman, Jiko, or even a nice place at Disney Springs.
Private Fireworks Cruise - Might be late to try to book depending when your trip is but for $399 you can book a private fireworks cruise for up to 10
Special Tour - Something like Savor the Savanna at Animal Kingdom could be special
Spa Time?
 
I surprised my wife (with two kids in tow) for our 15th anniversary with a fireworks pontoon boat cruise. We had dinner at Kona and I timed it to stroll down by the Poly docks afterwards and when we approached our boat with the anniversary sign, they said "hey someone is celebrating an anniversary, too!". :D

Overall, it was a terrific experience. Unfortunately for us it was a little cool on the lake and was overcast, so the fireworks were a little lackluster. Regardless, it is still one of our favorite Disney memories.
